Tender and Flavorful Boiled Pork (Bossam)
How to Make Boiled Pork (Bossam) Without Any Unpleasant Odors
A special menu for family members staying home during the holidays! Everyone enjoyed it so much and said it was delicious.
Boiling Ingredients- Pork Leg (Front Thigh) 600g
- Doenjang (Korean Soybean Paste) 1 Tbsp (heaping)
- Mirin (or Cooking Wine) 3 Tbsp
- Whole Peppercorns 7
- Bay Leaf 1
- Scallion Roots 5 (cleaned)
- Onion 1/2 (cut into large pieces)
- Dried Cheongyang Pepper 1 (optional, for a spicy kick)
- Water 1,500ml
Cooking Instructions
Step 1
Pour 1,500ml of water into a pot. Ensure there’s enough water to fully submerge the pork.
Step 2
Add 3 Tbsp of mirin to the water. This helps to remove any gamey odors. You can substitute with sake or soju.
Step 3
Add 1 heaping tablespoon of doenjang (Korean soybean paste). Doenjang is excellent for neutralizing pork’s odor and adding a savory depth.
Step 4
Stir well with a spatula or spoon to dissolve the doenjang completely in the water. It’s best to ensure there are no lumps.
Step 5
Add 7 whole peppercorns. The peppery aroma effectively masks any unpleasant smell from the meat.
Step 6
Add 1 bay leaf. Bay leaves are very effective at removing any porky smell with their distinct aroma.
Step 7
Add 5 clean scallion roots. Scallion roots contain a lot of good fragrance and will make the broth even more flavorful.
Step 8
Add 1 dried Cheongyang pepper. If you enjoy a bit of spice, this will add a pleasant kick. You can omit it if you prefer.
Step 9
Add 1/2 onion, cut into large chunks. Onions help to create a refreshing broth and tenderize the meat.
Step 10
Once all ingredients are in the pot, cover with a lid and bring to a rolling boil over high heat. Let the ingredients infuse their flavors into the water as it heats up.
Step 11
When the water is boiling vigorously, carefully add the 600g of pork leg. Be cautious of splashing water as you add the meat.
Step 12
After adding the pork, cover the pot again and reduce the heat to medium. Boiling on high heat can result in overcooked exterior and undercooked interior.
Step 13
Simmer the pork over medium heat for about 40 minutes. The cooking time can be adjusted based on the thickness of the pork. To check for doneness, insert a skewer or fork into the thickest part; clear juices should run out.
