Tender and Flavorful Boiled Pork (Suyuk) Recipe
Delicious Suyuk Without Any Gamey Odor

Main Ingredients- Pork shoulder or belly, 600g
- Ssanghwatang (Korean herbal tea bag), 1
- Doenjang (soybean paste), 1 Tbsp
- Water, 1 liter
Special Dipping Sauce- Ssamjang (Korean spicy dipping sauce), 1 Tbsp
- Minced garlic, 1 Tbsp
- Cheongyang chili pepper, 1, finely chopped
- Sesame oil, 1 Tbsp

Cooking Instructions
Step 1
First, rinse the pork thoroughly under cold running water to remove any blood. This step helps in minimizing any gamey odor in the boiled pork.
Step 2
Place the washed pork in a large pot. Add 1 liter of water, 1 Ssanghwatang bag, and 1 tablespoon of doenjang. Ssanghwatang is excellent for removing pork odor and adding a subtle, complex flavor.
Step 3
Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer gently for about 40-50 minutes. Adjust the cooking time based on the thickness of your pork. Skim off any scum or impurities that rise to the surface during cooking for a cleaner taste.
Step 4
While the pork is cooking, let’s prepare a special dipping sauce. In a small bowl, combine 1 tablespoon of ssamjang, 1 tablespoon of minced garlic, 1 finely chopped Cheongyang chili pepper, and 1 tablespoon of sesame oil. Mix everything together well until evenly combined. This will create a flavorful and slightly spicy dipping sauce.
Step 5
To check if the pork is done, pierce it with a chopstick or skewer. If clear juices run out, it’s perfectly cooked. If you see any pinkish liquid, continue simmering for a bit longer.

Once cooked, let the Suyuk rest for a few minutes. Then, slice it as thinly as possible. Thinly sliced pork has a more tender and pleasant texture. Arrange the slices beautifully on a serving plate. Enjoy your delicious, homemade Suyuk, especially while it’s still warm!
