Main Ingredients

  • Pork shoulder or belly, 600g
  • Ssanghwatang (Korean herbal tea bag), 1
  • Doenjang (soybean paste), 1 Tbsp
  • Water, 1 liter

Special Dipping Sauce

  • Ssamjang (Korean spicy dipping sauce), 1 Tbsp
  • Minced garlic, 1 Tbsp
  • Cheongyang chili pepper, 1, finely chopped
  • Sesame oil, 1 Tbsp

Cooking Instructions

First, rinse the pork thoroughly under cold running water to remove any blood. This step helps in minimizing any gamey odor in the boiled pork.

Place the washed pork in a large pot. Add 1 liter of water, 1 Ssanghwatang bag, and 1 tablespoon of doenjang. Ssanghwatang is excellent for removing pork odor and adding a subtle, complex flavor.

Bring the pot to a boil over high heat. Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer gently for about 40-50 minutes. Adjust the cooking time based on the thickness of your pork. Skim off any scum or impurities that rise to the surface during cooking for a cleaner taste.

While the pork is cooking, let’s prepare a special dipping sauce. In a small bowl, combine 1 tablespoon of ssamjang, 1 tablespoon of minced garlic, 1 finely chopped Cheongyang chili pepper, and 1 tablespoon of sesame oil. Mix everything together well until evenly combined. This will create a flavorful and slightly spicy dipping sauce.

To check if the pork is done, pierce it with a chopstick or skewer. If clear juices run out, it’s perfectly cooked. If you see any pinkish liquid, continue simmering for a bit longer.
