Tender and Flavorful Braised Pork Ribs (Galbi Jjim)
The Ultimate Pork Rib Sauce: A Must-Try Recipe!
This braised pork rib (galbi) dish was a huge hit with the whole family, everyone loved mixing their rice with the sauce! I’m sharing my go-to recipe with you all. Get ready for a delicious meal that will have everyone asking for seconds!
Ingredients- 2kg pork ribs
- 1/2 cup soy sauce (approx. 100ml)
- 2 Tbsp plum extract (Maesil Cheong) (approx. 30ml)
- 2 Tbsp Cheongju (or mirin) (approx. 30ml)
- 2 Tbsp minced garlic (approx. 30g)
- 2 Tbsp sugar (approx. 30g)
- 1 Tbsp ginger extract (approx. 15ml) or 1/2 tsp minced ginger
- 1/2 apple
- 1 pear
- 1 onion
- 2 cups water (approx. 400ml)
- 1 stalk green onion
- 2-3 bay leaves
- A pinch of whole peppercorns
Cooking Instructions
Step 1
Begin by soaking the pork ribs in cold water for about 2 hours to remove excess blood. This step is crucial for a clean flavor without any gamey taste. After soaking, gently rub the cut edges of the ribs to remove any bone fragments and rinse them thoroughly.
Step 2
Bring a pot of water to a boil. Blanch the prepared pork ribs for about 5 minutes. This process helps to remove any remaining impurities or excess fat. Once blanched, drain the ribs and rinse them under cold running water to wash away any loosened grease and debris.
Step 3
Now, let’s prepare the flavorful sauce. Roughly chop 1/2 apple, 1 pear, and 1 onion. Place them in a blender along with 1 cup of water (approx. 200ml) and blend until smooth.
Step 4
Strain the blended fruit and vegetable mixture through a fine-mesh sieve or cheesecloth to extract the liquid. In a bowl, combine this juice with 1/2 cup soy sauce, 2 Tbsp plum extract, 2 Tbsp Cheongju, 2 Tbsp minced garlic, 2 Tbsp sugar, 1 Tbsp ginger extract, and the remaining 1 cup of water (approx. 200ml). Whisk everything together until the sugar is dissolved, creating a delicious marinade.
Step 5
Place the blanched ribs in a bowl and pour the prepared marinade over them. Ensure all the ribs are well-coated. Cover the bowl or wrap it with plastic wrap and let it marinate in the refrigerator for at least 30 minutes. For an even deeper flavor, you can marinate them for longer, up to an hour or more.
Step 6
Transfer the marinated ribs and all the marinade to a deep pot or wok. Add 2-3 bay leaves and a pinch of whole peppercorns for aroma. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low, cover the pot, and simmer for about 25 minutes.
Step 7
During the simmering process, skim off any foam or impurities that rise to the surface. This will help to keep the sauce clear and enhance the overall flavor of the dish.
Step 8
Once the liquid has reduced and thickened to your liking, add the chopped green onion. Simmer for a few more minutes until the green onions are tender and the sauce is well-incorporated. Your delicious braised pork ribs are now ready to be enjoyed! Serve hot with steamed rice.
