  • 2 cups Soy Sauce (Jinganjang)
  • 1 Onion (medium-sized)
  • 1 Pear (medium-sized)
  • 1 cup Minced Garlic
  • 1/2 cup Minced Ginger
  • 1/2 cup Beer
  • 1 cup Corn Syrup or Fruit Molasses (Maesilcheong)

Cooking Instructions

Prepare the aromatics for the braised pork ribs: Peel the onion and pear, remove the core and seeds from the pear, and chop them into large chunks (about 2-3 cm) suitable for blending.

Thoroughly remove the blood from the pork ribs. Soak them in cold water for at least 1 hour, changing the water occasionally. This step is crucial for eliminating any gamey odor and ensuring a clean, delicious flavor in your braised ribs.

Combine the chopped onion and pear, 2 cups of soy sauce, 1 cup of minced garlic, 1/2 cup of minced ginger, 1/2 cup of beer, and 1 cup of corn syrup or fruit molasses in a blender. Blend until smooth to create the braising sauce. The beer helps to tenderize the meat and remove any unwanted odors.

Drain the pork ribs well after soaking. Place them in a bowl, pour the prepared sauce over them, and mix thoroughly to coat. Let the ribs marinate for at least 30 minutes. For an even deeper flavor, marinate in the refrigerator for 1-2 hours.
