Wondering what to make with the squid I bought? I decided to try making braised squid, which I thought kids would enjoy! Its savory and slightly sweet flavor makes it a perfect side dish to have on hand. It’s so delicious, you won’t be able to resist!

Main Ingredients

  • 3 fresh squids
  • 1/2 onion
  • 1 dried chili pepper (for flavor)
  • 1 stalk green onion

Braising Sauce

  • 1 cup water
  • 1/2 cup soy sauce
  • 3 Tbsp corn syrup (or other liquid sweetener)
  • 2 Tbsp sugar
  • Pinch of black pepper
  • 1 Tbsp mirin (rice wine)
  • 1 Tbsp grapeseed oil (my secret ingredient!)

Cooking Instructions

Step 1

First, prepare the squid by cleaning it thoroughly. Then, score the surface of the squid with shallow cuts. This helps the sauce penetrate better and improves the texture. Blanch the squid in boiling water for just 1-2 minutes. Immediately drain it in a colander and let all the water drip out. Be careful not to over-boil, as it can make the squid tough.

Now, let’s make the delicious braising sauce. In a pot, combine 1 cup of water, 1/2 cup of soy sauce, 3 Tbsp corn syrup, 2 Tbsp sugar, a pinch of black pepper, and 1 Tbsp mirin. Stir everything well. Here’s my secret weapon for tenderness: add 1 Tbsp of grapeseed oil! Squid can easily become chewy when braised for too long, but adding grapeseed oil surprisingly keeps it tender throughout the cooking process.

Once the braising sauce comes to a rolling boil, add the blanched squid, sliced onion, dried chili pepper, and green onion to the pot. Start braising over medium-high heat until the sauce reduces and thickens. Remember to stir the squid occasionally to ensure it’s evenly coated with the delicious sauce.

When the sauce has thickened and the squid has absorbed all the wonderful flavors, it’s ready! This dish is fantastic served over a warm bowl of rice. It makes a perfect make-ahead side dish that will be a hit at your table.
