A Delightful Octopus Pasta Recipe Made with Leftover Boiled Octopus
Utilize any leftover boiled octopus from holidays or celebrations to create a wonderful octopus pasta! Similar to making shrimp scampi, sauté fragrant garlic and spicy chilies in olive oil, then add chewy boiled octopus for a rich and satisfying flavor. This dish can be easily made with ingredients you have on hand, making it perfect for home parties or special occasions.
Main Ingredients- 4 boiled octopus tentacles (approx. 300g)
- 3 Tbsp olive oil
- 1.5 Tbsp butter
Cooking Instructions
Step 1
First, prepare 4 boiled octopus tentacles (about 300g). The skin can be a bit chewy, so carefully remove the loose skin with a knife. Then, slice the octopus tentacles into about 0.5cm thick pieces on the diagonal. Slicing them too thin can reduce the texture, while too thick may make them difficult to cook through, so aim for a moderate thickness.
Step 2
Heat a sufficiently deep pan over medium-low heat. Add 3 Tbsp of olive oil and 1.5 Tbsp of butter and let them melt. Be careful not to let the butter burn and melt it over a gentle heat.
Step 3
Once the butter is melted, add 4 thinly sliced garlic cloves to the pan. Sauté them gently over low heat until they turn golden brown and release their fragrant aroma. It’s crucial to ensure the garlic doesn’t burn.
Step 4
As the garlic becomes fragrant, add 3 Korean green chilies, halved and seeded, sliced diagonally, and sauté them together. The spicy aroma will spread, enriching the pasta’s flavor. Feel free to adjust the amount of chili to your preference.
Step 5
Now, add the prepared octopus and 3/4 tsp of herb salt. Sauté everything together for 1-2 minutes until well combined. Since the octopus is already cooked, avoid overcooking, which can make it tough; just sauté briefly.
Step 6
Even at this stage, it’s delicious! Serve with warm, toasted baguette slices and enjoy dipping them into the oil and octopus left in the pan. It makes a wonderful appetizer or snack. Try it with the baguette!
Step 7
Instead of baguette, cook 80g of spaghetti according to package directions. Add the cooked spaghetti to the pan and toss it with the octopus and oil sauce until everything is well coated. This creates a delicious octopus pasta! For a silkier sauce, reserve some pasta water and add it to the pan while tossing.
