First, to ensure freshness and remove any gamey odor, soak the pork ribs in cold water for at least 1 hour to thoroughly drain out the blood. Removing the blood well reduces the meat’s odor and results in a cleaner taste.

After draining the blood, carefully cut the ribs between the bones with a knife. This helps the sauce penetrate the meat better and makes cooking more convenient. Soaking them again to remove blood after cutting is also a good idea.

To remove impurities and tenderize the meat, fill a pot with enough water to cover the ribs. Add green onions and mirin, which are effective in removing odors, and boil for 10 minutes. Skim off any foam or impurities that rise to the surface during boiling. It’s important to boil until the water is no longer bloody.

While the ribs are boiling, prepare the delicious sauce. Finely slice or mince half an onion, and have your soy sauce and pear juice pouch ready. Pear juice helps to tenderize the meat and adds a touch of sweetness.

For a smoother and more evenly blended sauce, use a blender. Place the sliced onion, soy sauce, and pear juice into the blender and puree until smooth.
