  • 1 soju cup (approx. 50ml) Soju or Cooking Wine

Wasabi Soy Dipping Sauce

  • 3 Tbsp Soy Sauce (45ml)
  • 1 Tbsp Sugar (15g)
  • 1 Tbsp Vinegar (15ml)
  • 1 tsp Wasabi (or to taste)
  • 1 Tbsp Water (15ml)

Cooking Instructions

First, prepare 600g of fresh pork shoulder and a bunch of chives that have been washed and trimmed. Pork shoulder is ideal for steaming as its moderate fat content melts away, resulting in a tender and flavorful dish.

Fill a steamer pot with ample water and bring it to a boil. Once the water is boiling, carefully arrange the pork shoulder slices, one by one, ensuring they don’t overlap on the steamer rack. This technique ensures even cooking and minimizes the loss of meat juices.

Lightly season the pork slices with a pinch of salt and pepper. Be careful not to over-season, as it can become too salty. Cover the steamer with its lid and steam over medium heat for about 10 to 15 minutes, once the steam starts to rise.
