How to Make Delicious Stir-Fried Bracken Fern
A staple side dish for Korean holidays! Following the stir-fried balloon flower roots, here’s a delicious recipe for stir-fried bracken fern (gosari). It’s perfect for ancestral rites (charye) and can also be mixed into a delightful bibimbap. The fragrant bracken’s texture combined with the savory seasoning makes it a true rice thief. Main Ingredients- 700g rehydrated bracken fern
- 1 handful minced green onion (approx. 1/4 cup)
Seasoning Ingredients- 2 Tbsp soy sauce (jin ganjang)
- 2 Tbsp Korean soup soy sauce (jigganjang)
- 3 Tbsp oligosaccharide
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (maesil cheong)
- Pinch of black pepper
- 1 Tbsp sesame oil
- Pinch of toasted sesame seeds
- 2 Tbsp soy sauce (jin ganjang)
- 2 Tbsp Korean soup soy sauce (jigganjang)
- 3 Tbsp oligosaccharide
- 1 Tbsp minced garlic
- 1 Tbsp plum extract (maesil cheong)
- Pinch of black pepper
- 1 Tbsp sesame oil
- Pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the rehydrated bracken fern. Gently rinse the bracken fern 2-3 times under running water until it becomes tender. After rinsing, place the bracken fern in a colander to drain any excess water.

Lay out a few sheets of paper towel on a clean surface. Place the drained bracken fern on top, then cover it with more paper towels. Gently press down with your hands to absorb as much remaining moisture as possible. This step is crucial to prevent excess water during cooking, leading to a better texture.

Now it’s time to season. Generously drizzle olive oil into a frying pan. Without turning on the heat, add the prepared bracken fern, minced green onion, and all the seasoning ingredients (soy sauce, soup soy sauce, oligosaccharide, minced garlic, plum extract, pepper) to the pan. Put on a pair of disposable gloves and gently mix everything together with your hands, ensuring the seasoning coats the bracken fern evenly. Once everything is well-marinated, place the pan on the stove and turn on the heat.

Cook over medium heat, stirring constantly with chopsticks or a spatula. Be careful not to burn the bracken fern as you stir-fry it until it’s well-cooked and slightly toasted. This stir-frying process deepens the flavor and enhances the aroma of the bracken.
