Cooking Instructions
Step 1
This vibrant red scallop steamed dish is not only a culinary delight but also adds a touch of elegance to your table thanks to its beautiful color.
Step 2
Doesn’t the sight of these fresh red scallops look appetizing? Steaming them in their shells locks in their tender texture and delicious juices.
Step 3
While most commercially sold scallops are pre-purged, it’s a good idea to soak them in cold water for about 15 minutes and rinse them gently to remove any potential saltiness or impurities. This ensures a cleaner taste.
Step 4
While the scallops are soaking, you can prepare other ingredients to save time. Properly purged scallops offer a fresher flavor.
Step 5
Pour 1.5 liters of water into a large steamer and bring it to a boil over high heat. Once boiling, add 2-3 tablespoons of sake. Sake helps to eliminate any fishy smell from the scallops and enhances their flavor. When steam is rising vigorously, add the prepared red scallops, cover with a lid, and steam for 4-5 minutes. You can adjust the steaming time based on the size of the scallops.
Step 6
After the steaming time, you’ll notice the scallops starting to open their shells. This indicates they are perfectly cooked and ready to enjoy.
Step 7
Steamed red scallops look beautifully plump and tender. Their chewy texture and natural sweetness are simply delightful.
Step 8
Let’s make a simple and delicious dipping sauce to complement the steamed scallops. You can easily make a great gochujang sauce at home with common ingredients, without needing to buy pre-made ones. In a bowl, combine 3 tablespoons of gochujang, 1 tablespoon of sugar, 1 tablespoon of vinegar, and 1.5 tablespoons of water. Mix well until smooth. This sauce is the perfect accompaniment to the tender, steamed red scallops.
