Main Ingredients

  • Beef for Bulgogi, 400g
  • Onion, 1/2
  • Green Onion (Scallion), 1 stalk
  • King Oyster Mushrooms, 2
  • Enoki Mushrooms, 2 handfuls

Marinade Ingredients

  • Plum Extract, 1.5 Tbsp
  • Unrefined Brown Sugar, 1 Tbsp
  • Soy Sauce, 4 Tbsp
  • Minced Garlic, 1.5 Tbsp
  • Sesame Oil, 1.3 Tbsp
  • Black Pepper, a pinch

Cooking Instructions

Step 1

First, cut the beef for bulgogi into bite-sized pieces and place them in a large bowl. Add 1 Tbsp of unrefined brown sugar and 1.5 Tbsp of plum extract. Gently massage the ingredients into the beef with your hands and let it marinate for 10 minutes. Adding sugar beforehand is a secret trick to make the meat extra tender and succulent!

Step 1

Step 2

While the beef is marinating, prepare the marinade. In a separate bowl, combine 4 Tbsp of soy sauce, 1.5 Tbsp of minced garlic, 1.3 Tbsp of sesame oil, and a pinch of black pepper. Mix well. This marinade will infuse the beef with flavor while you prepare the other ingredients.

Step 2

Step 3

Now, let’s get the vegetables ready. Cut the king oyster mushrooms in half lengthwise, then slice them into bite-sized pieces, about 0.5 cm thick. Trim the base of the enoki mushrooms and rinse them lightly. Slice the onion into thin strips (about 0.5 cm wide) and cut the green onion diagonally into large pieces. Having all your vegetables prepped will make cooking much smoother.

Step 3

Step 4

It’s time to start cooking! After the beef has marinated for about 20 minutes, transfer it to a pot or pan. Set the heat to medium-low. Cooking over medium-low heat initially prevents the beef from becoming tough and ensures it cooks to a tender perfection.

Step 4

Step 5

Once the beef is partially cooked (just starting to brown on the surface), add the prepared king oyster mushrooms, green onion, and onion. Stir everything together gently, then cover the pot with a lid and let it simmer over medium heat for about 5-7 minutes. The vegetables will release their moisture, and the flavors will meld beautifully with the beef.

Step 5

Step 6

Almost done! When all the ingredients are tender and the sauce has thickened slightly, add the enoki mushrooms on top. Enoki mushrooms cook very quickly, so cover the pot again and cook for just 1-2 more minutes. Your delicious Mushroom Bulgogi is ready! Serve it hot over steamed rice for a truly satisfying meal.
