Main Ingredients- 10 fresh zucchini leaves (choose tender ones)
- 1/2 Korean zucchini (a specific variety similar to young summer squash)
- 1.5 Tbsp soybean paste (Doenjang, adjust to your preference)

Cooking Instructions
Step 1
First, prepare the broth. In a pot, combine 10 cups of anchovy and kelp broth. Dissolve 1.5 tablespoons of soybean paste into the broth, ensuring there are no clumps. Bring this mixture to a boil over high heat.

Prepare the zucchini leaves. Trim any tough stems from the fresh zucchini leaves and wash them thoroughly under running water. Gently pat them dry, then tear them by hand into bite-sized pieces, about 2-3 cm wide. Once the broth is boiling, add the torn zucchini leaves.

After the zucchini leaves have been added and the soup returns to a boil, prepare the Korean zucchini. Halve the zucchini, scoop out the seeds, and slice it into thick pieces, about 0.5 cm thick. Add the sliced zucchini to the boiling broth.
