  • Baby cuttlefish 600g
  • 1/2 onion
  • 8-10 cloves garlic
  • 1 handful shredded green onion
  • 2 sheets dried kelp (kombu)
  • 1 chili pepper (e.g., Cheongyang pepper)

Golden Soy Sauce Marinade
  • 4 Tbsp cooking wine (mirin)
  • 2 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 3 Tbsp corn syrup (oligo syrup)

Cooking Instructions

Step 1

First, it’s important to clean the 600g of baby cuttlefish thoroughly. Rubbing them well with coarse salt will help remove any fishy odor and enhance their tender, chewy texture.

Step 2

Next, prepare the vegetables for the stir-fry. Slice the garlic cloves thinly or mince them. Slice the 1/2 onion into strips. Finely chop 1 chili pepper for a touch of heat, and shred the green onion into thin strands for the garnish. Feel free to use any vegetables you have in your refrigerator!

Step 3

While preparing the vegetables, let’s briefly blanch the cleaned baby cuttlefish. Add the cuttlefish to boiling water and blanch for just about 3 minutes. Blanching them beforehand prevents excess water from releasing during the stir-frying process, resulting in a more flavorful dish.

Step 4

Heat a pan with oil. First, stir-fry the sliced garlic and sliced onion until fragrant. Sauté them until the garlic is lightly golden and aromatic, then add the pre-blanched baby cuttlefish and continue to stir-fry.

Step 5

Now, let’s make and add the delicious soy sauce marinade. For 600g of baby cuttlefish, mix 4 Tbsp cooking wine, 2 Tbsp soy sauce, 1 Tbsp oyster sauce, and 3 Tbsp corn syrup to create the golden ratio sauce. Pour the sauce into the pan and stir well to coat the squid, allowing the flavors to meld. Taste and adjust seasoning by adding more soy sauce or corn syrup to your preference. (If you don’t have oyster sauce, you can substitute it with 4 Tbsp soy sauce.)

Step 6

Finally, add a generous handful of the beautifully shredded green onions and stir-fry until they are just wilted. Add 2 sheets of long-cut dried kelp for an extra umami boost and the chopped chili pepper for a spicy kick. Finish by sprinkling a little black pepper and some toasted sesame seeds.
