Discover a delightful dish featuring tender beef and fragrant mushrooms, wrapped in fresh eggplant. These eggplant rolls, enhanced with a rich tomato sauce and melted cheese, are a perfect way to enjoy a special eggplant creation right at home.
Ingredients- 150g beef top round
- 2 eggplants
- 50g Soonjung yellow oyster mushrooms
- A little Baekseon white oyster mushrooms
- 1/4 onion
- A little cabbage
- 180g tomato sauce
- 5 string cheeses
- 100g mozzarella cheese
- A pinch of salt
- A pinch of black pepper
Cooking Instructions
Step 1
Slice the beef top round thinly along the grain, matching the length of the eggplants. Thinly slicing it like julienne will make it easier to roll with the eggplant.
Step 2
Trim the ends of the eggplants, then slice them lengthwise into about 0.3cm thick strips. Lightly salt the sliced eggplants and let them sit for 10 minutes to draw out moisture.
Step 3
After 10 minutes, you’ll see moisture released from the eggplants. Pat them thoroughly dry with a paper towel. Removing excess moisture is key to preventing the eggplant from becoming mushy and maintaining a pleasant texture.

Heat a non-stick pan over medium-low heat. Place the eggplant slices in the pan and grill them on both sides until lightly golden brown. Lay them out flat to cool; this will soften them and make them easier to roll.
Step 5
Now, let’s make the sauce! Lightly oil a pan and sauté the minced onion until translucent. Once the onion is cooked, add the shredded cabbage and eggplant slices and sauté them together.

Add the minced yellow oyster mushrooms and chopped chili peppers (optional) and stir-fry until all ingredients are well combined. Sautéing quickly will help preserve the mushrooms’ aromatic flavor.

Pour in the tomato sauce and stir well to combine with the other ingredients. Season with salt and pepper to finish the sauce.

In a separate pan, cook the thinly sliced beef top round. Grill the white oyster mushrooms alongside the beef. Mushrooms cook very quickly, so grill them for just a short time. Season lightly with salt.

Spread about 1/3 of the prepared tomato sauce onto the bottom of an air fryer-safe dish. The sauce will add moisture and flavor to the eggplant rolls.
Step 10
On each cooled eggplant slice, place some grilled mushrooms and beef, followed by a string cheese stick. Carefully roll up the eggplant to form a log. Ensure you roll them tightly so the cheese doesn’t leak out.

Arrange the rolled eggplant pieces attractively on top of the sauce in the baking dish.

Tear the string cheese and place it over the eggplant rolls. Then, generously cover them with mozzarella cheese, like a blanket of cheese. The melting cheese will enrich the eggplant rolls.

Preheat your air fryer to 190°C (375°F) and cook the eggplant rolls for 7 minutes. Enjoy the fantastic combination of golden-brown cheese, tender eggplant, and chewy beef! Your delicious eggplant rolls are ready.
