Nutritious Recipe: Beef and Eggplant Fried Rice for Your Baby
Introducing a special meal for your little one: a nutritious fried rice made with plenty of beef and eggplant, focusing on flavor and texture. This recipe is suitable for the later stages of baby food or early toddler meals, its soft texture ensures your baby will accept it without fuss.
Main Ingredients- 35g Ground Beef (drained of excess liquid)
- 30g Eggplant
- 20g Onion
- 15g King Oyster Mushroom
- 100g Cooked Rice (warm)
- 1.5g Seaweed (baby-friendly, unsalted seasoned seaweed)
- 20ml Water
- 1 Tbsp Cooking Oil (mild oil suitable for babies)
Cooking Instructions
Step 1
First, carefully check and thoroughly prepare all the ingredients for the fried rice. For the ground beef, press it with paper towels to drain any excess liquid; this helps reduce digestive discomfort for your baby.
Step 2
Dice the eggplant into bite-sized pieces suitable for your baby. Finely mince the onion and king oyster mushroom as well. Ensuring the vegetables are finely chopped makes them much easier for your baby to chew and swallow.
Step 3
Use baby-friendly, unsalted seasoned seaweed. Crumble it finely with your hands or cut it with scissors. This will be added at the end to bring a savory aroma to the fried rice.
Step 4
Now, heat a frying pan over low heat for making the fried rice. It’s best to use a pan specifically for babies or one with a good non-stick coating. Drizzle 1 tablespoon of cooking oil evenly into the pan.

Add the finely chopped eggplant, onion, and king oyster mushroom to the heated pan. Sauté them slowly over low heat until the vegetables are tender and translucent. It’s important to cook them thoroughly.
Step 6
Once the vegetables are somewhat cooked, add the drained ground beef and stir-fry together. Use chopsticks or a fork to break up the beef so it doesn’t clump and ensure it cooks evenly.
Step 7
When the ground beef is fully cooked and has changed color, add 100g of warm cooked rice to the pan. If the rice is clumped, gently break it apart with a spatula and mix it well with the vegetables and beef.
Step 8
Add 20ml of water to prevent the fried rice from becoming too dry. Stir while adding the water, cooking again until the rice and ingredients are nicely combined and moist.
Step 9
Finally, continue to stir-fry until most of the water has evaporated. Then, add the prepared seaweed and gently mix it in. Your delicious beef and eggplant fried rice is ready! Let it cool slightly before serving it to your baby.
