Main Ingredients

  • Cut seaweed, 2 servings
  • Beef for soup (stew meat), 1 pack
  • Cooked rice, 2 bowls (day-old rice recommended)
  • Sesame oil

Seasoning

  • Minced garlic, 1 Tbsp
  • Soup soy sauce (Guk-ganjang), 3-4 Tbsp
  • Anchovy extract (fish sauce), 1 Tbsp

Cooking Instructions

Step 1

First, lightly coat a pot with sesame oil and heat it over medium-low heat. Once you start smelling the fragrant sesame oil, proceed to the next step.

Open the pack of beef for soup and add it to the pot. Also add 1 tablespoon of minced garlic. Sauté the beef until it’s nicely browned and fragrant. Cooking the beef with garlic not only removes any gamey odors but also enhances its flavor.

Once the beef is partially cooked, add the pre-soaked and cut seaweed. Sauté them together for about 1-2 minutes. It’s best to cut the seaweed into bite-sized pieces when you soak it. Since porridge is meant to be eaten in large spoonfuls, overly long strands of seaweed can be inconvenient.

After briefly stir-frying the seaweed and beef, pour in 1 cup of water (about 200ml). Once the water comes to a boil, reduce the heat slightly.

Add the 2 bowls of cooked rice you prepared into the pot. Using leftover cold rice is great because it makes the porridge extra tender and breaks down easily. Gently break up any clumps of rice with your spatula.

As the rice breaks down and the porridge starts to thicken, it’s time to season. First, add 3-4 tablespoons of soup soy sauce and taste. If it’s not salty enough, add a little more soup soy sauce. For an extra boost of umami, add 1 tablespoon of anchovy extract to adjust the seasoning. You can also use salt for the final seasoning, according to your preference. Simmer for a bit longer to let all the flavors meld together, and your delicious beef and seaweed porridge is ready!
