  • 0.5 Tbsp Olive Oil
  • Pinch of Pepper

Cooking Instructions

Step 1

Prepare your fresh beef sirloin. Trim any excess fat from the meat. Gently pat the surface of the beef with paper towels to remove any excess blood. This step helps to eliminate any gamey odor, resulting in a cleaner flavor.

Step 1

Step 2

Cut the trimmed beef into bite-sized pieces. Aim for pieces that are not too large, similar to the size of the vegetables, to ensure even cooking and easy enjoyment.

Step 2

Step 3

Lightly season the beef by sprinkling 2-3 pinches of salt evenly over it.

Step 3

Step 4

Add a pinch of pepper, ideally steak seasoning pepper, for an enhanced aroma.

Step 4

Step 5

Drizzle 0.5 tablespoon of olive oil over the beef. The oil helps to retain moisture, keeping the meat tender and juicy.

Step 5

Step 6

Wearing disposable gloves, gently massage the seasonings into the beef. Marinating the meat beforehand, especially with sirloin of this thickness, allows the flavors to penetrate deeply, resulting in a more delicious outcome. Let the seasoned beef rest for a while to absorb the flavors.

Step 6

Step 7

Prepare your vegetables. Slice the onion, green bell pepper, and bell peppers into bite-sized pieces, similar to the beef. Mince the garlic or cut it into 2-3 pieces. Trim the stems off the shiitake mushrooms and cut them into quarters. Have 10g of butter ready.

Step 7

Step 8

Create the special sauce that will give your chop steak its signature flavor. In a bowl, combine 2.5 tablespoons of Tonkatsu sauce, 0.4 tablespoon of oyster sauce, 0.4 tablespoon of honey mustard, 1 tablespoon of ketchup, 0.5 tablespoon of oligodang, and 1 tablespoon of mirin.

Step 8

Step 9

Whisk the sauce ingredients together with a whisk or spoon until well combined. If you don’t have Tonkatsu sauce, feel free to substitute it with barbecue sauce or any steak sauce you have on hand for a similar delicious result.

Step 9

Step 10

Heat a pan over medium heat. Add the minced garlic and 2 tablespoons of olive oil. Sauté the garlic until fragrant and lightly golden brown, infusing the oil with its aromatic essence.

Step 10

Step 11

Once the garlic is fragrant, add the prepared bell peppers, green bell pepper, onion, and shiitake mushrooms to the pan. Sprinkle 1-2 pinches of salt over the vegetables to lightly season them.

Step 11

Step 12

To maintain the vegetables’ crisp-tender texture, stir-fry them quickly for about 20 seconds. Avoid overcooking, as this can release excess moisture and dull their vibrant colors. High heat and quick stir-frying are key.

Step 12

Step 13

After briefly stir-frying the vegetables, add the pre-seasoned beef to the pan. Cook, stirring, just until the beef is about 70% cooked through, meaning the pink color is mostly gone but a slight blush remains. Be careful not to overcook at this stage, as the beef will finish cooking with the sauce.

Step 13

Step 14

Now, add the prepared special chop steak sauce and 10g of butter to the pan. The butter will add a rich, savory flavor and a beautiful glossy finish.

Step 14

Step 15

Continue to stir-fry gently until the butter is fully melted and the sauce coats everything evenly. Once the sauce has slightly thickened, turn off the heat. If the sauce tastes too strong after thickening, you can adjust the seasoning by adding a little water or cooking for a slightly shorter time. Taste and adjust; add more salt if it’s too bland, or a touch more oligodang for sweetness.

Step 15

Step 16

Finally, finish with a generous sprinkle of steak seasoning pepper. Your delicious and visually appealing Beef Chop Steak is now ready to be served! Enjoy it while it’s warm.
