Main Ingredients
  • 200g thinly sliced beef (for Jeon, e.g., top sirloin)
  • 3 Tbsp sweet rice flour (glutinous rice flour)
  • 2 fresh eggs

Beef Marinade
  • 1 Tbsp mirin (or cooking wine)
  • 1/2 Tbsp sugar
  • 1 Tbsp soy sauce
  • 1 pinch salt
  • 1/2 Tbsp sesame oil
  • A pinch of black pepper

Cooking Instructions

Step 1

First, gently pat the thinly sliced beef dry with paper towels to remove any excess blood. This step is crucial for eliminating any gamey odor and ensuring the marinade penetrates better. Next, prick the surface of the beef all over with a fork. This creates small holes that allow the marinade to soak in more deeply, resulting in a more tender Jeon.

Step 2

Prepare all the ingredients for the beef marinade in a small bowl. Combine 1 tablespoon of mirin, 1/2 tablespoon of sugar, 1 tablespoon of soy sauce, a pinch of salt, a pinch of black pepper, and 1/2 tablespoon of sesame oil. Whisk everything together thoroughly to create a delicious marinade.

Step 3

Apply the prepared marinade evenly to both sides of the beef slices that have had their blood removed and been pricked with a fork. Ensure every piece is coated well to achieve balanced seasoning and a flavorful Beef Jeon.
