Main Ingredients- Beef (for Jeon) 200g
- Perilla leaves 20 sheets
- Green bell pepper 1/4
- Red bell pepper 1/4
- Eggs 3
- Salt 1 pinch
- Flour 3-4 Tbsp
- Cooking oil as needed
Beef Marination- Soy sauce 1 Tbsp
- Sesame oil 1 Tbsp
- Ground black pepper a little

Cooking Instructions
Step 1
Gently press the beef for Jeon with a paper towel to remove any excess blood. Removing the blood ensures a clean and odorless Jeon.
Step 2
In a bowl, combine the beef with 1 Tbsp soy sauce, 1 Tbsp sesame oil, and a pinch of ground black pepper. Mix well to marinate. This step infuses the beef with deep flavor.
Step 3
Spread a generous amount of flour on a large tray or plate. Place the marinated beef on top, and use a sieve to evenly dust the beef with more flour. Using a sieve makes it easy to coat the beef without getting your hands messy.

If the beef pieces are larger than the perilla leaves, cut them in half for easier handling and a better fit.

Lightly dust the perilla leaves with flour using a sieve. It’s best to coat only one side, the rougher side of the leaf. This helps the beef adhere well and maintains the shape during cooking.

Crack 3 eggs into a bowl, add a pinch of salt, and whisk until well combined, breaking the egg yolks and whites. Adding a little salt seasons the egg wash perfectly.

Finely dice the green and red bell peppers that will be used as a topping. If you don’t have bell peppers, you can use finely chopped chili peppers (green or red) for a touch of spiciness. (Leftover pieces were used here.)

Set aside about 3 tablespoons of the beaten egg mixture. Stir in the finely diced bell peppers. This seasoned egg mixture will be used as a colorful topping.

Place the beef onto the flour-dusted perilla leaves.

Dip the perilla leaf with the beef, front and back, into the egg wash, ensuring it’s evenly coated.

Heat a pan over medium-low heat and add a generous amount of cooking oil. Place the egg-coated perilla leaf onto the pan. Spoon a little of the reserved topping egg mixture onto the beef. This adds color and extra flavor.

Pan-fry over medium-low heat until golden brown on both sides and the beef is cooked through. Be mindful of the heat to prevent burning. Aim for a crispy exterior and a tender interior.
