Main Ingredients

  • 500g Korean Beef Brisket (Chadolbagi), thinly sliced
  • 1 handful of Bean Sprouts
  • 1/2 Carrot
  • 1 handful of assorted Mushrooms (e.g., Shiitake, Oyster, King Oyster)
  • 1 handful of Chives or Scallions
  • Pinch of Black Pepper
  • Pinch of Salt

Dipping Sauce (Optional)

  • 1/2 Onion
  • 1 Tbsp Wasabi Sauce (adjust to taste)
  • 1 Tbsp Sugar (adjust sweetness)

Cooking Instructions

Step 1

Begin by preparing your vegetables. Wash the bean sprouts thoroughly and drain. Thinly julienne the carrot. Cut the mushrooms into bite-sized pieces and trim the chives or scallions, cutting them into 3-4 cm lengths. In a mixing bowl, combine the bean sprouts, julienned carrots, mushrooms, and chives. Season lightly with a pinch of salt and pepper, then toss gently to combine. This seasoning helps enhance the vegetables’ natural flavors without making them soggy. Next, take a slice of beef brisket and place a portion of the seasoned vegetable mixture near one end. Tightly roll the beef around the vegetables, starting from the end with the vegetables. Ensure the roll is firm but not overly tight, which could cause it to unravel during steaming.

Step 2

Arrange the rolled beef and vegetable bundles neatly in a steamer basket. Make sure not to overcrowd the basket, allowing steam to circulate evenly. Place the steamer basket over a pot of boiling water. Cover the pot and steam over medium-high heat for about 15-20 minutes, or until the beef is fully cooked through and the vegetables are tender-crisp. You can check for doneness by gently piercing a roll with a fork; it should go through easily. Steaming ensures the rolls remain moist and tender.

Step 2

Step 3

Once steamed, carefully remove the beef rolls from the steamer and arrange them on a serving platter. For an optional dipping sauce, finely mince the onion and mix it with the wasabi sauce and sugar. Adjust the sweetness and spiciness to your preference. Serve the steamed beef rolls immediately while they are warm, perhaps with the prepared dipping sauce or your favorite soy-based sauce. This dish is a delightful way to enjoy both the savory beef and the healthy vegetables.
