We received a wonderful gift of premium Korean beef this Lunar New Year! Among them, I’ve made a succulent hot pot using the chewy and flavorful beef shank (Aron Satae). While delicious simply sliced after boiling, submerging it in a savory broth and simmering it to perfection elevates the experience. This beef shank hot pot is perfect for hosting guests or as a warming winter meal! I’ll share my secrets for boiling beef shank until incredibly tender and a special dipping sauce that perfectly complements the meat. Don’t miss out on this recipe!
Boiling Beef Ingredients- Beef Shank (Aron Satae) 400g
- Green Onion 1 stalk
- Minced Garlic 1 Tbsp
- Minced Ginger 1 tsp
- Whole Peppercorns 1 Tbsp
- Cooking Wine (or Mirin) 1 Tbsp
Hot Pot Ingredients- Water Parsley (Minari) 1 handful
- Chives 1 handful
- Korean Soy Sauce (Gukganjang) 1 Tbsp
- Salt to taste
Dipping Sauce- Soy Sauce (Jin Ganjang) 2 Tbsp
- Water 2 Tbsp
- Vinegar 1 Tbsp
- Lemon Juice 1/2 Tbsp
- Sugar 1/2 Tbsp
- Mustard paste to taste
- Chopped Green Onion 1 Tbsp
- Minced Garlic 1 tsp
- Water Parsley (Minari) 1 handful
- Chives 1 handful
- Korean Soy Sauce (Gukganjang) 1 Tbsp
- Salt to taste
Dipping Sauce- Soy Sauce (Jin Ganjang) 2 Tbsp
- Water 2 Tbsp
- Vinegar 1 Tbsp
- Lemon Juice 1/2 Tbsp
- Sugar 1/2 Tbsp
- Mustard paste to taste

- Minced Garlic 1 tsp
Cooking Instructions
Step 1
Before boiling, soak the beef shank in cold water to remove any blood. If the meat is very fresh, you can simply rinse it under cold water or blanch it quickly before cooking. Since my beef was fresh but had been frozen, I soaked it in sugar water (2 cups water with 1 Tbsp sugar) for about 40 minutes for a faster blood removal. If not using sugar, soak for 1-2 hours. Add the beef shank, green onion, whole peppercorns, minced garlic, and minced ginger to a pot. If you prefer a cleaner broth, place the aromatics in a spice bag or a mesh strainer. Cover with enough water to submerge all ingredients and add the cooking wine. Bring to a boil over high heat uncovered. Once boiling, cover the pot, reduce the heat to medium, and simmer for 1 hour until the beef is tender.
Step 2
While the beef is simmering, prepare the vegetables and the dipping sauce. Cut the water parsley (minari) and chives into approximately 6-7 cm lengths. You can also add napa cabbage or mushrooms to the hot pot. Chives are commonly paired with suyuk, but don’t skip the water parsley! Its refreshing aroma beautifully complements the rich flavor of the beef.
Step 3
Let’s make the special dipping sauce. In a small bowl, whisk together the soy sauce, water, vinegar, lemon juice, sugar, minced garlic, and chopped green onion. Add mustard paste to your preference. For those who enjoy a bit of heat, finely chopped chili peppers (like Cheongyang peppers) or red chilies, and minced onion also pair wonderfully. Lemon juice isn’t strictly necessary, but its zestiness adds a lovely brightness. If you don’t have lemon juice, simply increase the vinegar slightly.
Step 4
Once the beef shank has simmered and is tender, remove it from the pot and let it cool slightly. It’s difficult to slice thinly when it’s piping hot. Place it on a cutting board to cool down faster. Once cooled enough to handle, slice the beef thinly. I aimed for thinner slices, but it wasn’t as easy as I’d hoped because it hadn’t cooled completely! Once the beef is sliced, you’re ready for your hot pot. Season the broth with Korean soy sauce and salt to your liking. Arrange the sliced beef and prepared vegetables attractively in a hot pot, pour in the seasoned broth, and bring it to a gentle simmer at the table to enjoy!
Step 5
After you’ve enjoyed all the meat and vegetables, don’t discard the flavorful broth! Add noodles like kal-guksu, somyeon, or even rice noodles to the pot. These noodles soak up the rich beef essence beautifully. (Instant ramen noodles are generally not recommended as they can overpower the delicate broth.)
