  • 1/4 Onion
  • Basil pesto 4 Tbsp
  • 6 sheets Rice paper
  • Whole grain mustard 4 Tbsp
  • Salt
  • Pepper
  • Olive oil
  • Steak sauce 2 Tbsp (for serving)

Cooking Instructions

Step 1

First, prepare the beef tenderloin. Gently pat it dry with paper towels. Season both sides evenly with salt and pepper. Lightly brush with olive oil to add flavor and prevent drying. Let it marinate for about 10 minutes to allow the flavors to meld.

Step 1

Step 2

Finely chop the mixed mushrooms and onion. Heat a non-stick frying pan over medium-high heat. Add the chopped mushrooms and onion to the dry pan. Stir-fry quickly to evaporate their moisture and concentrate their flavor, seasoning lightly with salt and pepper. Cook until most of the moisture has evaporated, then remove from heat and let cool.

Step 2

Step 3

Place the marinated beef tenderloin in a hot pan. Sear each side for about 1 minute over high heat. The goal here is to quickly brown the exterior to lock in the juices, a process called ‘searing’. Be careful not to overcook the inside; you just want to create a nice crust. Avoid cooking it through at this stage.

Step 3

Step 4

Once seared, generously spread the whole grain mustard evenly over the surface of the beef tenderloin. Next, carefully wrap the tenderloin tightly in plastic wrap to form a neat cylindrical shape. This helps maintain the shape during cooking and allows the mustard flavor to infuse gently. Let it rest, still wrapped, for about 5 minutes to set the shape.

Step 4

Step 5

Lightly dip each sheet of rice paper in warm water until it becomes pliable, but be quick – over-soaking can make it tear easily. Lay a softened rice paper sheet flat. Spread a generous amount of the sautéed mushroom and onion mixture over it. Then, add a layer of basil pesto. Place the shaped beef tenderloin in the center. Carefully and tightly roll up the rice paper, ensuring all the filling is enclosed. Make sure to roll it snugly.

Step 5

Step 6

Gently brush the exterior of the rolled rice paper with a beaten egg yolk. This will help the surface turn a beautiful golden brown and become slightly crispy in the air fryer. Preheat your air fryer to 200°C (400°F). Place the beef tenderloin rolls inside and air fry for 5 to 7 minutes, or until the exterior is golden and crisp. Cooking time may vary depending on your air fryer model. Keep an eye on it; if it achieves a nice color sooner, you can remove it earlier.

Step 6

Step 7

Slice the cooked beef tenderloin rolls into desired portions and arrange them attractively on a plate. Serve with the steak sauce on the side for an extra touch of flavor. Your delicious Beef Tenderloin Rolls Steak is now ready to impress! Enjoy this special dish with your loved ones.
