Last Saturday marked my twin sons’ birthday, and I prepared a special, tender, and delicious braised beef short ribs dish for them. I felt a little apologetic as they were celebrating their birthday while recovering from an injury. However, their older sister thoughtfully booked a wonderful Chinese restaurant and a seafood place, making their birthday a truly special and enjoyable occasion. This time, I made the braised ribs with a minimal yet flavorful marinade. It always amazes me that the key to delicious braised ribs isn’t necessarily a long list of ingredients, but rather the perfect balance of seasonings. I believe the ratio of the marinade ingredients significantly impacts the final taste. Even without exotic components, this soy-sauce-based braised beef short ribs, seasoned to perfection, makes an impressive birthday centerpiece! Wishing you all a happy afternoon!
Main Ingredients- Fresh Beef Short Ribs 2.77Kg
- 2 Large Sweet Onions
Magic Marinade- Soy Sauce 8 Tbsp
- Oyster Sauce 2 Tbsp
- Honey 7 Tbsp
- Minced Garlic 1 Tbsp
- Cooking Wine (Mirin or Sake) ½ cup
- Plum Extract 1 Tbsp
- A pinch of Black Pepper

Cooking Instructions
Step 1
Soak the beef short ribs in a mixture of water and soju (or cooking wine) for at least 30 minutes to remove any blood. Thoroughly draining the blood ensures a clean, non-gamey flavor.
Step 2
Peel and roughly chop the onions, then purée them in a blender until very smooth. Adding puréed onion to the marinade creates a smoother texture and deeper flavor for the braised ribs.
Step 3
In a large bowl, combine the soy sauce, oyster sauce, honey, minced garlic, cooking wine, plum extract, and black pepper. Stir well until the honey and any sugar are dissolved, creating your delicious marinade.

Add the drained short ribs to the bowl with the puréed onions and the prepared marinade. Gently mix everything together with your hands, ensuring each piece of rib is coated evenly with the marinade. Let it marinate for about 10 minutes.

Transfer the marinated short ribs to an airtight container and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld. After marinating, place the ribs in a pot, add a little water if needed (about 1/2 cup), cover, and simmer over medium-low heat for about 1 hour, or until the meat is very tender. Baste the ribs with the braising liquid occasionally to keep them moist.
