Main Ingredients- 1.2kg Pork Ribs
- 1 Apple (medium)
- 1 Tbsp Minced Garlic
- 1/2 Onion (medium)
- 1 Potato (medium)
- 1/6 Carrot
- A moderate amount of King Oyster Mushrooms
- 1 Shiitake Mushroom
- 6-7 Rice Cakes (optional)
- 1/2 Green Onion
- 50ml Soy Sauce (regular)
- 30ml Soy Sauce for Soup (light soy sauce)
- 100g Sugar
- 50ml Mirin (or cooking wine)
- 1 Tbsp Dashida (or MSG)
- 1 Tbsp Black Pepper

- 20ml Mirin (or cooking wine)

Cooking Instructions
Step 1
Soak the pork ribs in cold water for about 30 minutes to 1 hour to remove any blood. It’s even better if you change the water once or twice during this time. Thoroughly draining the blood is key to a clean, un-gamey flavor.
Step 2
Place the pork ribs in a pot and add all the ingredients for removing odor: bay leaves, minced garlic, grated ginger, whole peppercorns, and 20ml of mirin. Add just enough water to lightly cover the ribs.
Step 3
Bring the water to a boil over medium-high heat. Once boiling, cook for about 5 minutes, then turn off the heat. Drain the ribs and rinse them under cool running water. This blanching step helps remove any remaining impurities and blood, making the meat cleaner. Gently rinse the blanched ribs under running water.
Step 4
Combine all the marinade ingredients in a blender and blend until smooth. The ingredients to blend are: 1 apple, 1 Tbsp minced garlic, 1/2 onion, 100g sugar, 30ml soy sauce for soup, 50ml regular soy sauce, 50ml mirin, 1 Tbsp Dashida, and 1 Tbsp black pepper. Blending the ingredients ensures the sauce evenly coats the ribs and contributes to a tender texture.
Step 5
Place the drained and blanched pork ribs into an electric pressure cooker. Pour the blended soy sauce marinade over the ribs. Use the ‘Steam’ or ‘Braised Ribs’ function (or ‘Cook’ function if those are unavailable) and cook for about 1 hour until tender. Using a pressure cooker is convenient and ensures the ribs cook gently without burning.
Step 6
While the pork ribs are cooking in the pressure cooker, prepare the vegetables and mushrooms. Cut the potato into large chunks, and chop the carrot similarly. Slice the king oyster and shiitake mushrooms into bite-sized pieces. If using rice cakes, rinse them lightly with water.
Step 7
Transfer the pork ribs, after cooking in the pressure cooker for about 1 hour, to a regular pot. (Transfer the braising liquid as well.) Add the potatoes first and simmer over medium heat for about 10 minutes, allowing the potatoes to soften slightly.
Step 8
Once the potatoes are slightly tender, add all the prepared mushrooms (king oyster, shiitake), carrots, and rice cakes to the pot. Cover and simmer for another 5 minutes, allowing all the ingredients to meld with the sauce.
Step 9
Finally, add the chopped green onion to the pot. Simmer for another 1-2 minutes to infuse the green onion’s aroma. Your delicious soy sauce braised pork ribs are now ready! You can garnish with a sprinkle of sesame seeds if desired.
