Quick and Delicious Braised Pork Ribs Made with Baek Jong-won’s Recipe
We made this braised pork ribs (jjim) for my daughter’s birthday because a celebration wouldn’t feel complete without it. Using fresh, raw ribs, we braised them with care, resulting in a beautiful birthday feast that the whole family delighted in. This recipe makes it easy to enjoy delicious jjim at home, not just for special occasions.
Main Ingredients- 1kg fresh raw pork ribs
- 1/4 daikon radish
- 1/2 carrot
- 1/2 onion
- 2 Korean chili peppers (cheongyang peppers)
- 1/2 stalk scallion
Flavorful Marinade- 1 cup soy sauce (200ml)
- 1/2 cup cooking wine (mirin) (100ml)
- 1/2 cup sugar (100ml)
- 1 cup water (200ml)
- 1/2 cup chopped scallion (approx. 50g)
- 2 Tbsp minced garlic (30g)
- 1 Tbsp sesame oil (15ml)
- A little ginger juice or minced ginger (approx. 1 tsp)
- 1 cup soy sauce (200ml)
- 1/2 cup cooking wine (mirin) (100ml)
- 1/2 cup sugar (100ml)
- 1 cup water (200ml)
- 1/2 cup chopped scallion (approx. 50g)
- 2 Tbsp minced garlic (30g)
- 1 Tbsp sesame oil (15ml)
- A little ginger juice or minced ginger (approx. 1 tsp)
Cooking Instructions
Step 1
Soak the pork ribs in cold water for about 2 hours to remove excess blood. Change the water 1-2 times during this period to ensure a cleaner taste and to get rid of any gamey odor. Thoroughly draining the blood is crucial.
Step 2
In a mixing bowl, combine soy sauce, cooking wine, sugar, water, chopped scallions, minced garlic, sesame oil, and ginger. Whisk well to create a flavorful marinade ahead of time. Ensure all ingredients are evenly mixed.
Step 3
Drain the pork ribs completely after removing the blood. Then, toss them with the prepared marinade and let them sit for about 20 minutes. Make sure to coat the ribs evenly so they absorb the flavors well.
Step 4
Peel and prepare the daikon radish, carrot, and onion by cutting them into bite-sized pieces (about 2-3 cm) so they cook evenly. Slice the Korean chili peppers diagonally.
Step 5
Place the marinated pork ribs into a thick-bottomed pot or a pot suitable for braising. Add enough water to just cover the ingredients. Bring to a boil over high heat.
Step 6
Once the ribs come to a rolling boil, add the prepared daikon radish. Reduce the heat to medium-high and let it cook for about 20 minutes, or until the radish turns translucent and tender.
Step 7
When the radish is partially cooked, add the carrots and onion. Continue to cook, stirring occasionally to prevent sticking, until the vegetables are tender. Ensure all vegetables are cooked through.
Step 8
As the vegetables are almost cooked, add the diagonally sliced Korean chili peppers and the roughly chopped scallions. Lower the heat to medium-low, cover the pot, and let it simmer gently for about 10 minutes to allow the flavors to meld deeply. The sauce will thicken during this stage.
Step 9
If you prefer a more tender texture, you can continue to simmer on low heat with the lid on for an additional 10-20 minutes. Serve hot with a side of rice for a delightful meal!
