Main Ingredients
- 1 chicken breast (approx. 200-250g)
- 300g peeled quail eggs (about 15-20 eggs)
- 1 bunch green onions (white parts primarily)
Braising Sauce
- 400ml water
- 5 Tbsp soy sauce
- 1 Tbsp plum extract (or syrup)
- 2 Tbsp honey
- 2 Tbsp sesame oil
- 0.5 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp cooking wine (like Mirin)
- 400ml water
- 5 Tbsp soy sauce
- 1 Tbsp plum extract (or syrup)
- 2 Tbsp honey
- 2 Tbsp sesame oil
- 0.5 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp cooking wine (like Mirin)
Cooking Instructions
Step 1
Place the chicken breast in a pot and add enough water to cover it completely. Boil until thoroughly cooked, which should take about 15-20 minutes, ensuring it’s cooked through.
Step 2
While the chicken breast is boiling, take the peeled quail eggs out of their container and rinse them lightly under running water. (Boiling and peeling quail eggs yourself can be quite a chore, so using pre-peeled ones makes the process much more convenient.)
Step 3
Wash the green onions and chop them into large pieces, about 3-4cm in length. Adding them to the braise will impart a subtle, delicious aroma.
Step 4
Once the chicken breast is cooked, remove it from the pot and let it cool slightly. Then, shred it by hand into bite-sized pieces that are easy for children to eat. Shredding too finely might cause it to break apart, so aim for a moderate size.
Step 5
Now, let’s prepare the braising sauce. Pour 400ml of water into a pot. Add 5 Tbsp soy sauce, 1 Tbsp plum extract, 2 Tbsp honey, 2 Tbsp sesame oil, and 0.5 Tbsp minced garlic. Mix well and bring to a boil over high heat.
Step 6
Once the sauce begins to boil, add the chopped green onions and let them simmer together for a bit, allowing their fragrance to infuse the liquid.
Step 7
When the sauce comes to a boil again, add the shredded chicken breast and the rinsed quail eggs. Stir in 1 Tbsp cooking wine and 1 Tbsp toasted sesame seeds. Reduce the heat to medium and let it simmer gently for at least 40 minutes, or until the sauce has thickened and the ingredients are well-coated and flavored. Stir occasionally to prevent sticking.
Step 8
Your tender chicken breast and quail egg soy-braised dish is ready! The chicken is much softer than beef braised dishes, making it easier for children to chew, and it serves as a wonderful side dish. Enjoy your meal!
