These round, bite-sized chicken breast and tofu pancakes are a hit with both kids and adults! They offer a perfect harmony of tender tofu and lean chicken breast. Main Ingredients- 1/4 block firm tofu (approx. 80-100g)
- 1/2 chicken breast (approx. 100-120g)
- 1/4 onion
- 2 stalks of green onion or the white part of leeks
- 3 Tbsp pancake mix (approx. 30g)
Seasoning & Marinade- 1 Tbsp Mirin (or cooking wine)

Cooking Instructions
Step 1
First, it’s crucial to drain as much water as possible from the tofu. Wrap the tofu in a cheesecloth or paper towels and press firmly with your hands to remove excess moisture. Slice the chicken breast thinly; this helps it mix well with the batter and cook evenly.
Step 2
Finely mince the onion. If you prefer a milder flavor or are making these for children, soaking the minced onion in cold water for about 10 minutes and then squeezing out the moisture will make it even softer. Finely chop the green onions or the white part of leeks as well.
Step 3
In a bowl, combine the prepared chicken breast with 1 Tbsp of Mirin and 1 Tbsp of tuna extract for marinating. Let it sit for about 5 minutes to absorb the flavors. Then, add 3 Tbsp of pancake mix and knead everything together until well combined to form the batter. Ensure the chicken breast is well broken up and incorporated into the mixture.
Step 4
Scoop out portions of the batter with a spoon and shape them into small, flat rounds with your hands. Making them bite-sized makes them easy to eat and visually appealing. Avoid making them too thick, so they cook through evenly.
