Cooking Instructions
Step 1
First, prepare the vegetables and chicken breast. Peel the onion and dice it into 1cm cubes. Peel the sweet potato and cut it into similar-sized cubes as the onion. Break the broccoli into bite-sized florets. Cut the chicken breast into bite-sized pieces, about 2cm.
Step 2
Marinate the chicken breast: In a bowl, combine the cut chicken breast with 2 tablespoons of cooking wine (mirin), a pinch of salt, and a pinch of black pepper. Gently mix and let it marinate for about 10 minutes. This step helps remove any gaminess from the chicken and makes it more tender.
Step 3
Blanch the broccoli: Bring a pot of water to a boil. Add a small pinch of salt to the boiling water. Add the prepared broccoli florets and blanch them for just 30 seconds. Be careful not to overcook, as this can make the broccoli mushy. Immediately rinse the blanched broccoli under cold water to stop the cooking and retain its vibrant green color. Drain well.
Step 4
Sauté the ingredients: Heat a pan over medium heat and add 1-2 tablespoons of cooking oil. Add the marinated chicken breast and sauté until it turns white and becomes opaque. Then, add the diced sweet potato and onion. Continue to stir-fry for about 3 minutes over medium heat until the vegetables are slightly softened and fragrant.
Step 5
Add liquid and simmer: Pour in 2 paper cups of heavy cream and 1/2 paper cup of water. Season with a pinch of salt and black pepper to your taste. Stir everything together well. Once the mixture comes to a simmer, reduce the heat to medium, cover the pan, and let it cook gently for about 10 minutes. The sweet potatoes should become tender, and the sauce will thicken.
Step 6
Finish and serve: After 10 minutes, add the blanched broccoli to the stew. Let it simmer for another moment until the broccoli is heated through and the flavors meld together. Your delicious chicken breast cream stew is ready! Serve hot and enjoy this comforting dish.
