Spring Roll Ingredients

  • 2 chicken breasts
  • 1 handful of cabbage
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 1/2 cucumber
  • 1/3 carrot
  • 1/4 pineapple

Creamy Peanut Sauce

  • 1 Tbsp sugar
  • 1 Tbsp lemon juice
  • 2/3 Tbsp vinegar
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1 Tbsp peanut butter
  • A pinch of sesame seeds
  • A pinch of black pepper
  • A touch of mustard

For Boiling Chicken Breast

  • 1 bay leaf

For Seasoning Chicken Breast

  • 2 pinches of salt
  • A little black pepper

Cooking Instructions

Place the chicken breasts in a pot with 1 bay leaf. Cover with water and boil for about 15 minutes, or until cooked through. Drain the chicken and immerse it in cold water to cool. Once cooled, shred the chicken into bite-sized pieces. Season the shredded chicken with 2 pinches of salt and a little black pepper, and mix well.

Wash the cabbage thoroughly, remove the core, and thinly slice it. Place the sliced cabbage in a bowl and soak it in water with 1 tablespoon of vinegar for about 5 minutes to enhance its crispness. Afterward, drain the cabbage thoroughly in a sieve.

Wash the yellow and red bell peppers, remove the stems, seeds, and membranes. Slice them thinly into strips. Their vibrant colors will make your spring rolls look even more appealing.

Wash the cucumber and cut it in half lengthwise. Optionally, scoop out the seeds if they are large, then slice the halves thinly into strips. Slicing them not too thinly will maintain a pleasant crunch.

Peel and wash the carrot, then slice it thinly into strips. If using canned pineapple, cut it into bite-sized pieces. If using fresh pineapple, peel it, remove the core, and cut it into desired pieces. For added variety and flavor, you can also include thinly sliced imitation crab sticks or strips of egg crepe.

In a bowl, combine 1 tablespoon of sugar, 1 tablespoon of lemon juice, 2/3 tablespoon of vinegar, 1 tablespoon of corn syrup (or oligosaccharide), and 1 tablespoon of peanut butter. Mix well. Gently rub the sesame seeds between your palms before adding them to the sauce to release their nutty aroma. Finish with a sprinkle of black pepper and stir everything together until well combined. Your tasty peanut sauce is ready!

Fill a shallow dish with warm water. Dip one rice paper wrapper at a time into the water for a few seconds until it becomes soft and pliable. Carefully lift it out and place it flat on a clean surface or plate.
