Tender Chicken Tenderloins (Chicken Cutlets)
[Kid-Friendly Favorite!] Crispy & Tender Chicken Tenderloins Recipe
We’ve made delicious chicken cutlets using tender chicken tenderloins, which are much softer than chicken breast and perfect for kids! Their melt-in-your-mouth tenderness will have your little ones clearing their plates in no time!
Main Ingredients- 500g fresh chicken tenderloins (cut into bite-sized pieces suitable for children)
- 5 Tbsp all-purpose flour
- 2 fresh eggs (lightly beaten to create an egg wash)
- 10 Tbsp panko breadcrumbs (for extra crispiness)
- 1 tsp salt (for seasoning)
- A pinch of black pepper (to enhance flavor)
- Generous amount of cooking oil (enough to submerge the chicken)
Cooking Instructions
Step 1
First, sprinkle 1 tsp of salt and a pinch of black pepper evenly over the prepared chicken tenderloins. This step is crucial for seasoning and removing any potential gaminess.
Step 2
Gently mix the seasoned chicken tenderloins with your hands to ensure the salt and pepper are distributed thoroughly. Marinating for about 5 minutes will enhance the flavor.
Step 3
Now it’s time to coat the chicken! First, dredge each piece of chicken tenderloin in the all-purpose flour, ensuring a thin, even layer. This helps the egg wash adhere better. Next, dip the floured chicken into the beaten egg wash, making sure it’s fully coated. Finally, generously coat the chicken with panko breadcrumbs, pressing gently to help them stick. This triple coating will ensure a wonderfully crispy texture.
Step 4
Heat a deep pan or pot with cooking oil over medium-high heat to about 170°C (340°F). Carefully add the coated chicken tenderloins to the hot oil. Fry for about 3-4 minutes until they turn a beautiful golden brown. Be sure to flip them occasionally to ensure even cooking and prevent burning.
Step 5
Remove the chicken tenderloins from the oil and let them drain for a moment. Let them cool slightly for 1-2 minutes, then re-submerge them in the 170°C oil for a quick second fry of about 30 seconds to 1 minute. This double-frying technique is the secret to achieving exceptionally crispy exteriors while keeping the inside juicy and tender.
Step 6
Once double-fried to perfection, remove the chicken tenderloins from the oil and place them on a wire rack or paper towels to drain any excess oil. They are delicious served immediately while warm, but letting them cool slightly will enhance their crispy texture even further.
