A Simple and Healthy Stir-Fry with Soy Farm and Enoki Mushrooms
Wondering what to do with the Soy Farm you bought in a bundle? I decided to stir-fry it with fresh chili peppers and vibrant enoki mushrooms! It’s a simple yet delicious and healthy meal. The combination of chewy Soy Farm, tender enoki mushrooms, and crisp chili peppers creates a delightful texture and rich flavor. This dish is perfect as a side for rice or a light meal on its own. Main Ingredients- Soy Farm (or Ham) 320g
- 1 pack Fresh Enoki Mushrooms
- 5 Crisp Chili Peppers
Seasoning & Others- A little Cooking Oil
- 1/2 Tbsp Minced Garlic
- A pinch of Salt
- A pinch of Black Pepper
- A little Chopped Scallions (optional)

Cooking Instructions
Step 1
First, trim the base of the enoki mushrooms and separate them into individual strands. Rinse them thoroughly under running water. Gently wash them so the clumped mushrooms loosen. You can either tear them into bite-sized pieces by hand or pat them dry with a paper towel and then slice them.
Step 2
Wash the crisp chili peppers under running water after removing the stems. Then, finely chop them into approximately 1cm pieces. If they have many seeds, rinsing them under water before chopping can make them cleaner.
Step 3
If your Soy Farm (or ham) was frozen, briefly blanch it in boiling water to thaw and remove any potential off-flavors. Once slightly cooled, cut it into bite-sized pieces. Avoid cutting them too small, as they might break apart during stir-frying. Aim for a manageable size.
Step 4
Heat about 1-2 tablespoons of cooking oil in a deep frying pan or wok over medium-low heat. Add the minced garlic and sauté until fragrant, releasing its aroma. If you don’t have minced garlic, simply heat the cooking oil until the pan is adequately preheated before proceeding to the next step.
Step 5
Add the prepared Soy Farm (or ham) to the preheated pan and stir-fry over medium heat until evenly browned. Sautéing sufficiently will enhance its flavor and texture. If using ham, its natural oils will start to render.
Step 6
Once the Soy Farm is partially cooked, add the chopped crisp chili peppers and stir-fry together. Cook for just 1-2 minutes, ensuring the chili peppers remain crisp and blend well with the Soy Farm. Avoid overcooking.
Step 7
When the chili peppers have slightly softened and are mixed with the Soy Farm, add the enoki mushrooms. Enoki mushrooms cook very quickly, so add them to the pan and stir-fry lightly for 1-2 minutes until they just begin to wilt.
Step 8
Finally, add the chopped scallions (frozen if previously stored) directly into the pan while still frozen. The fresh aroma of the scallions will add depth to the dish. If using fresh scallions, you can sauté them briefly until fragrant before adding them. It’s okay to omit the scallions if you don’t have them.
Step 9
You’re almost done! Season with a pinch of black pepper and salt to taste, adjusting as needed. Stir everything gently to ensure an even distribution of flavors. Once all ingredients are well-cooked and flavors have melded, turn off the heat and transfer the delicious Soy Farm and Enoki Mushroom Stir-Fry to a serving dish. Enjoy your meal!
