Tender Galbi-jjim: A Delicious Meat Side Dish with Finely Kneaded Dough and Seasoning
With 300g of minced beef, you can easily make delicious Galbi-jjim side dish. This recipe allows you to enjoy a softer Galbi-jjim by kneading the meat finely. It’s a recipe for enjoying tender Galbi-jjim.
Main Ingredients- 300g minced beef
- 3 button mushrooms
- 1/2 onion
- 4 Tbsp cooking oil
- A pinch of sesame seeds
- 2 pinches of salt
- A dash of black pepper
Beef Marinade- 1 Tbsp mirin (or rice wine)
- 0.5 Tbsp sugar
Galbi-jjim Seasoning- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 0.5 Tbsp salt
- 0.5 Tbsp sugar
- 1 Tbsp sesame oil
- A dash of black pepper
- 1 Tbsp mirin (or rice wine)
- 0.5 Tbsp sugar

- 0.5 Tbsp salt
- 0.5 Tbsp sugar

Cooking Instructions
Step 1
First, place 300g of minced beef in a large bowl. Add the beef marinade ingredients: 1 Tbsp mirin and 0.5 Tbsp sugar. Knead the mixture with your hands until it becomes sticky and well combined. Marinating the beef this way will make it more tender and remove any gamey odors.
Step 2
The key to tender Galbi-jjim is thorough kneading! Continue kneading the marinated beef for at least 5 minutes. Just like kneading dough for rice cakes (tteok), this process develops the meat’s texture, resulting in a chewier and softer Galbi-jjim. Use your wrist for a strong kneading motion – that’s the secret!
Step 3
Button mushrooms (3) and onion (1/2) are crucial ingredients that will add tenderness to the Galbi-jjim mixture. Finely mince them using a slicer or a knife. Mincing the vegetables finely ensures they blend well with the meat without affecting the overall texture when bitten.
Step 4
Heat 2 Tbsp of cooking oil in a pan over medium heat. Add the finely minced mushrooms and onion and stir-fry. Season with 2 pinches of salt and a dash of black pepper. This step enhances the savory flavor of the vegetables and helps evaporate their moisture, preventing the mixture from becoming watery when combined with the meat. Sauté for about 2-3 minutes until fragrant.
Step 5
Now, add the sautéed mushrooms and onion to the marinated beef. Incorporate all the Galbi-jjim seasoning ingredients (1 Tbsp minced garlic, 1 Tbsp soy sauce, 0.5 Tbsp salt, 0.5 Tbsp sugar, 1 Tbsp sesame oil, and a dash of black pepper). Knead the mixture thoroughly with your hands again until it feels sticky and cohesive. Once the mixture is well combined, shape it into your desired size and thickness. You can form them into small, flat patties or longer shapes.
Step 6
Heat the remaining 2 Tbsp of cooking oil in a clean pan over medium-low heat. Carefully place the shaped Galbi-jjim patties onto the hot pan. Cooking over medium-low heat allows the patties to cook through evenly without burning the outside.
Step 7
Flip the Galbi-jjim patties and cook until they are golden brown on both sides. Ensure the surface is a beautiful golden-brown color and that the inside is fully cooked. Cooking for about 4-5 minutes per side should achieve this. Avoid using high heat, as it will burn the outside before the inside is cooked. Pay close attention to the heat control.
Step 8
Arrange the perfectly cooked Galbi-jjim on a serving plate. Finish by sprinkling a pinch of sesame seeds for an extra nutty aroma. Your delicious and tender beef Galbi-jjim is now ready to be enjoyed! It pairs wonderfully with a warm bowl of rice.
