Hello everyone! Today, I’m going to share a truly delicious Ssambap recipe using kale, a treasure among green vegetables. Many people enjoy kale raw in juices or as wraps, but today, we’ll prepare kale leaves that are perfect for wraps – not too large. The size of the kale leaves, just right for wrapping, will determine the taste of your dish.
Step 2
Now it’s time to blanch the kale. Fill a pot with plenty of water and bring it to a rolling boil. Once the water is boiling, add 1 teaspoon of salt, then carefully place the prepared kale leaves into the boiling water. Blanch them for just 30 seconds to 1 minute. Blanching for too long can destroy the kale’s nutrients, so timing is crucial!
Step 3
Immediately after blanching, remove the kale from the hot water and plunge it into cold water to stop the cooking and cool it down. This step helps maintain the kale’s vibrant green color. Gently swish the kale leaves in the cold water 2-3 times. Be careful not to rub them vigorously; rinse until the water runs clear.
Step 4
Now it’s time to drain the kale thoroughly. Lay the blanched kale leaves on a colander, folding them in half so they don’t overlap, similar to how you’d hang laundry to dry. This method allows for good air circulation, helping the water drain much more effectively. Let them drain for at least 30 minutes, or until the excess water is completely removed. Proper draining is key to preventing a soggy wrap when you assemble it with rice.

With the water completely drained, your kale wraps are ready to be enjoyed! Store the finished kale wraps in an airtight container in the refrigerator. They are incomparably more tender than raw kale wraps, making them a hit even with those who don’t usually enjoy kale and, of course, with children!
