Ingredients

  • 2 Lion’s Mane mushrooms
  • 200g Beef (sirloin, tenderloin, or other steak cut)
  • 1/2 Onion
  • 1 head Garlic (about 5-6 cloves)
  • Pinch of Salt
  • Pinch of Whole Peppercorns
  • Pinch of Dried Basil
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Butter
  • 1 Tbsp Olive Oil

Cooking Instructions

Step 1

First, carefully prepare the Lion’s Mane mushrooms. Bring a pot of water to a boil and add a pinch of salt. Blanch the mushrooms for just about 1 minute. This helps remove any impurities and improves their texture. After blanching, rinse the mushrooms under cold water, drain them well, and then cut them into bite-sized pieces, about 2-3 cm each.

Next, prepare the vegetables and beef. Thinly slice the garlic cloves. Peel the onion and cut it into bite-sized cubes, about 2-3 cm. Pat the beef dry with paper towels to remove excess moisture (this helps reduce any gamey smell) and cut it into similar 2-3 cm cubes.

Now, heat 1 tablespoon of olive oil and 1 tablespoon of butter in a pan over medium-low heat. Once the butter has melted, add the thinly sliced garlic and sauté until fragrant, being careful not to burn it. When the garlic releases its aroma, add the cut Lion’s Mane mushrooms and sear them until they are lightly golden brown. You want them to get a slight char.

Once the mushrooms are lightly seared, add the cubed onion and beef to the pan. Stir-fry everything together. When adding the meat, try not to stir too frequently; let it sear for a bit before flipping to help retain its juices. When the beef is almost cooked through, freshly grind some peppercorns over the pan and add a pinch of dried basil for extra flavor. Finally, stir in 1 tablespoon of soy sauce and 1 tablespoon of sesame oil, tossing quickly to coat everything evenly and give it a nice sheen.
