Octopus Fruit Salad

  • 1/4 cooked octopus
  • 1/4 apple
  • 1/4 Korean melon (chamoe)
  • 1/4 melon
  • 1 Tbsp minced garlic
  • 1 Tbsp soy sauce
  • 1 Tbsp vinegar
  • 1 Tbsp sesame oil
  • A pinch of sesame seeds

Nut Yogurt Topping

  • 2 cups homemade yogurt

Cooking Instructions

Step 1

First, prepare the salad ingredients. Wash the apple, Korean melon, and melon thoroughly, remove the seeds, and cut them into quarters. Then, dice them into bite-sized pieces (about 1.5 cm cubes). If you have pre-cooked octopus, cut it into similarly sized pieces. (If your octopus is large, you can use a bit more than 1/4).

Step 1

Step 2

Now, let’s make a delicious salad dressing! In a small bowl, combine 1 tablespoon of minced garlic, 1 tablespoon of soy sauce, 1 tablespoon of tangy vinegar, and 1 tablespoon of savory sesame oil. Whisk them together until well combined. Finally, add a pinch of sesame seeds for an extra nutty flavor. This creates a refreshing and flavorful dressing that perfectly complements the fruits and octopus.

Step 2

Step 3

Place the prepared diced fruits and octopus in a mixing bowl. Pour the dressing evenly over them. Gently toss the ingredients with a spoon or spatula, being careful not to mash the fruits or octopus. Ensure all ingredients are lightly coated with the dressing. Your beautiful Octopus Fruit Salad is now ready!

Step 3

Step 4

Let’s prepare a refreshing yogurt topping with nuts to accompany the salad. In a serving bowl, add 2 cups of plain yogurt (homemade or store-bought). Drizzle with honey to your liking – feel free to add more if you prefer a sweeter taste. Sprinkle generously with your favorite assorted nuts for a delightful crunch. For an extra touch of nutrition and visual appeal, add a little bee pollen. This vibrant topping will enhance both the flavor and health benefits of your salad. Serve alongside the salad and enjoy!
