Tender Pork and Kimchi Rice
How to Make Delicious Pork and Kimchi Rice ♡
This time, I made a different kind of kimchi fried rice, one that doesn’t quite feel like kimchi fried rice! It has a softer texture than typical kimchi fried rice, making it very easy to eat and enjoy.
Ingredients- 2 cups soaked rice
- 1 large handful of thinly sliced pork for japchae (or bulgogi)
- 1 handful of kimchi
- 1 Tbsp gochujang (Korean chili paste)
- A little grated ginger
- A little sesame oil
- A little salt
- A little pepper
- 1.5 cups water (for cooking rice)
- Optional toppings: cheese, crumbled seaweed, chopped green onions
Cooking Instructions
Step 1
For the pork, I found that thinly sliced pork meant for japchae (stir-fried noodles) yields a better flavor. I used bulgogi cut, which is also quite delicious and tender.
Step 2
If you’re not using japchae-style pork, make sure to slice your chosen cut of pork into bite-sized strips.
Step 3
In a separate bowl, combine 1/2 tsp grated ginger, 1/2 Tbsp sesame oil, a pinch of salt, and a pinch of pepper. Mix well, then add the sliced pork and marinate for about 10 minutes. This will help tenderize and flavor the pork.
Step 4
Finely chop a handful of kimchi into small pieces so it mixes well with the rice. Using well-fermented kimchi will give the dish a richer flavor.
Step 5
Heat a non-stick pan over medium heat (no oil needed initially). Add the marinated pork and stir-fry until it’s mostly cooked through and slightly browned.
Step 6
Once the pork is nearly cooked, add the chopped kimchi to the pan. Stir-fry together until the kimchi softens slightly, about 2-3 minutes. Then, add the remaining 1/2 Tbsp of sesame oil and stir to combine, adding a nice aroma.
Step 7
Add 1 Tbsp of gochujang to the pan and continue to stir-fry for about 3 minutes. This step helps the flavors meld together. Be careful not to burn the gochujang by managing the heat. Transfer the cooked pork and kimchi mixture to your rice cooker pot.
Step 8
Add the 2 cups of soaked rice to the rice cooker pot along with the pork and kimchi mixture.
Step 9
Pour in 1.5 cups of water. The amount of water may need slight adjustment depending on the type of rice and how long it was soaked. Close the rice cooker lid and select the ‘regular cook’ or ‘white rice’ setting.
Step 10
Once the cooking cycle is complete, open the lid and gently fluff the rice with a rice paddle. Mix everything together thoroughly to ensure the kimchi and pork flavors are evenly distributed throughout the rice. Your delicious pork and kimchi rice is ready!
Step 11
Serve the pork and kimchi rice in bowls. For an extra touch, you can top it with melted cheese, crumbled seaweed, or chopped green onions. Enjoy this comforting and flavorful dish!
