  • 1.2kg Whole Pork Belly
  • 1 small Apple
  • 1 stalk Green Onion
  • 7-8 Bay Leaves
  • 6-7 slices Ginger
  • 1 tsp Whole Peppercorns
  • 1/2 cup Mirin (or 100ml cooking wine, 100ml Soju)

  • 0.3-1 Tbsp Instant Coffee Granules (any type)

Cooking Instructions

First, prepare the whole pork belly. To ensure even cooking and better flavor absorption, cut it into large pieces, about 1.5-2cm thick. Be careful not to cut it too thinly, as it might break apart while cooking.

In a deep and large pot, add enough water to completely submerge the pork belly. Once the water starts boiling, add the apple (cored and roughly chopped), green onion (focus on the white parts), sliced ginger, bay leaves, and whole peppercorns to eliminate odor and add flavor.

When the water is at a rolling boil, add the secret ingredient for tender, odor-free Suyuk: instant coffee granules. Coffee is highly effective at neutralizing any porky smell. Then, pour in the Mirin (or cooking wine/Soju) to further remove any remaining odors.

Temperature control is key! Bring it to a vigorous boil over high heat for 15 to 20 minutes. Then, cover the pot with a lid, reduce the heat to medium-low, and let it simmer for another 20 minutes. This method ensures the exterior cooks while the inside remains moist and tender.
