Cooking Instructions
Step 1
First, prepare the broth ingredients to remove any gamey odor from the pork. The recipe includes licorice root, but if you have ginseng rootlets at home, adding a small amount can enhance the flavor.
Step 2
In a large pot, combine all the broth ingredients (radish, onion, green onions, garlic, ginger, bay leaves, licorice root/ginseng, etc.) and add 5000cc of water. Bring to a boil.
Step 3
Once the broth starts boiling, add 2 Tbsp of coarse salt to season it.
Step 4
Next, dissolve 2 Tbsp of doenjang (soybean paste) into the broth. (Although missing from the photo, adding 30 whole peppercorns at this stage is highly effective for odor removal. If you don’t have whole peppercorns, a pinch of ground pepper can be used.)
Step 5
Here’s the first tip for the ultimate boiled pork recipe! Rinse the pork block with warm water above 50°C (122°F). This helps remove impurities from the surface.
Step 6
Soak the rinsed pork in warm water for 10 minutes to bleed out the excess blood. Soaking in warm water allows for quicker blood removal compared to cold water, and it effectively draws out impurities from within the meat, neutralizing any gamey smell.
Step 7
Once the broth is boiling vigorously,
Step 8
Add the pork, from which the blood has been removed, and 1/2 cup of soju to the pot.
Step 9
For the first 5 minutes, boil vigorously over high heat with the lid off to sear the surface of the meat. Then, cover the pot, reduce the heat to medium, and simmer gently for about 1 hour. This ensures the pork cooks evenly and becomes tender inside.
Step 10
The boiled pork after simmering for 1 hour! It smells wonderfully savory and looks delicious 🙂
Step 11
Second tip for the golden boiled pork recipe! Prepare a bowl of cold water with 3 Tbsp of coarse salt dissolved in it. This saltwater bath is crucial for achieving the perfect texture.
Step 12
Remove the well-cooked pork from the pot and quickly rinse it in the prepared saltwater. Rinsing in saltwater prevents the juices from escaping due to the heat, and briefly soaking it in cold water afterward enhances its chewy texture!
Step 13
Slice the tender, beautifully cooked pork into bite-sized pieces.
Step 14
Cutting it in half reveals the moist and tender interior, perfectly cooked through. ♥
Step 15
Serve the boiled pork with freshly made kimchi or crisp cabbage leaves. Accompanied by garlic and salted shrimp, you’ll have a feast!
