Boiled Pork Ingredients

  • Pork shoulder or butt (1kg)
  • Water (5000cc)
  • Radish (1/4 medium)
  • Onion (1/2 medium)
  • Green onions (2 stalks)
  • Garlic cloves (15)
  • Ginger slices (10 pieces)
  • Bay leaves (5)
  • Licorice root (5 pieces) (or a few ginseng rootlets if available)
  • Whole peppercorns (30) (or a pinch of ground pepper)

Seasoning & Additional Ingredients

  • Doenjang (soybean paste) (2 Tbsp)
  • Coarse salt (5 Tbsp) (2 Tbsp for broth, 3 Tbsp for finishing)
  • Soju (rice wine) (1/2 cup)

Cooking Instructions

First, prepare the broth ingredients to remove any gamey odor from the pork. The recipe includes licorice root, but if you have ginseng rootlets at home, adding a small amount can enhance the flavor.

In a large pot, combine all the broth ingredients (radish, onion, green onions, garlic, ginger, bay leaves, licorice root/ginseng, etc.) and add 5000cc of water. Bring to a boil.

Once the broth starts boiling, add 2 Tbsp of coarse salt to season it.

Next, dissolve 2 Tbsp of doenjang (soybean paste) into the broth. (Although missing from the photo, adding 30 whole peppercorns at this stage is highly effective for odor removal. If you don’t have whole peppercorns, a pinch of ground pepper can be used.)

Here’s the first tip for the ultimate boiled pork recipe! Rinse the pork block with warm water above 50°C (122°F). This helps remove impurities from the surface.

Soak the rinsed pork in warm water for 10 minutes to bleed out the excess blood. Soaking in warm water allows for quicker blood removal compared to cold water, and it effectively draws out impurities from within the meat, neutralizing any gamey smell.

For the first 5 minutes, boil vigorously over high heat with the lid off to sear the surface of the meat. Then, cover the pot, reduce the heat to medium, and simmer gently for about 1 hour. This ensures the pork cooks evenly and becomes tender inside.
