Tender Pork Tenderloin Jorim for Babies
Making Soft Pork Jorim with Tenderloin, Perfect for Toddlers
My baby loved the beef jorim I made, so I decided to try a pork tenderloin version! Using tenderloin makes it incredibly soft and delicious with a delightful sweet and savory flavor that babies adore. It’s a fantastic side dish that even adults will enjoy.
Main Ingredients- Pork tenderloin 300g
- 1 stalk of green onion
- 1/2 onion
- 5 whole peppercorns
- 1/4 piece of ginger
- 1 piece of dried kelp (dashima, about 5x5cm)
- 2 bay leaves
- 600ml water
- 3 Tbsp low-sodium baby soy sauce
- 1 Tbsp sugar (or agave syrup, plum extract)
Cooking Instructions
Step 1
First, gently rinse the pork tenderloin under running water and pat it thoroughly dry with paper towels. In a pot, combine the pork tenderloin (300g), half an onion (roughly chopped), one stalk of green onion (cut into large pieces), one piece of dried kelp, a quarter piece of ginger (sliced or whole), two bay leaves, and five whole peppercorns. Add 600ml of water and bring to a boil over high heat. Once it starts boiling, reduce the heat to medium-low, cover the pot, and simmer for about 40 minutes. This step helps to tenderize the pork and remove any gamey odors.
Step 2
After simmering for 40 minutes, carefully remove the pork tenderloin from the pot. Let it cool slightly, then shred it into bite-sized pieces along the grain. Shredding the meat allows it to absorb the sauce better, enhancing the flavor. Strain the cooking liquid through a fine-mesh sieve to remove any solids and impurities, ensuring you have a clear broth.
Step 3
Return the shredded pork tenderloin to the clear broth and bring it back to a boil over high heat. Once it boils again, reduce the heat to medium-low, and let it simmer for another 20 minutes, with the lid slightly ajar or removed. This allows the pork to fully absorb the flavors of the broth.
Step 4
As the broth begins to reduce, season it with 3 tablespoons of low-sodium baby soy sauce and 1 tablespoon of sugar. It’s best to keep the seasoning mild for babies. You can substitute the sugar with agave syrup or plum extract if preferred. Adjust the amount of soy sauce and sugar according to your baby’s preference.
Step 5
Continue to simmer over medium-low heat until the sauce has thickened to your desired consistency, becoming slightly syrupy. Taste and adjust the seasoning if necessary. Once it reaches the perfect consistency, turn off the heat. This tender pork jorim is delicious served warm, but it’s also excellent when chilled and stored in the refrigerator. Enjoy!
