  • Seasoned soy sauce (Guk-ganjang) 100ml
  • Sesame oil 30g
  • Sugar 2 Tbsp
  • Pinch of black pepper

1. Wash the pork tenderloin thoroughly under running cold water and pat it dry. Removing excess moisture is crucial to prevent splattering oil when stir-frying and to help retain the meat’s juices.

2. Cut the pork tenderloin into bite-sized pieces (about 2-3cm). Carefully trim away any tendons or tough sinew you find, as this will ensure a more tender result.

3. To tenderize the meat and add natural sweetness, use pear juice, balloon flower root and pear juice, onion juice, or fruit juice. Pour the prepared juice over the meat and gently knead it with your hands. Let it marinate for about 30 minutes to soften the pork.

For approximately 1kg of pork tenderloin, combine minced green onion (from 2 stalks), minced garlic (2 Tbsp), gochujang (1 cup), seasoned soy sauce (100ml), sugar (2 Tbsp), a pinch of black pepper, and sesame oil (2 Tbsp). Mix well. Add this seasoning mixture to the pork that was marinating in the juice and mix thoroughly.
