Tender Pressure Cooker Pork Rib Stew for the Whole Family
A Special Occasion Dish Kids Love: Pressure Cooker Pork Rib Stew
Due to requests from my children, I’ve made a tender and delicious pork rib stew using a pressure cooker, perfect for the whole family to enjoy! Experience a restaurant-quality dish at home.
Main Ingredients- 2 racks Pork Back Ribs (approx. 600-800g)
- 1 Tbsp Sesame Oil (for finishing)
Pre-boiling Ingredients- 5 Bay Leaves
- 1 Tbsp Cooking Wine or Sake
Spicy and Sweet Rib Seasoning- 1 bottle Store-bought Pork Rib Sauce (approx. 200-300g)
- 1 cup Water (200ml)
- 2 Tbsp Tuna Extract or Anchovy Sauce
- 1 Tbsp Cooking Wine or Sake
- 2 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- 5 Bay Leaves
- 1 Tbsp Cooking Wine or Sake

- 2 Tbsp Tuna Extract or Anchovy Sauce

- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
Cooking Instructions
Step 1
First, prepare the two racks of pork back ribs. Making shallow cuts along the bones halfway through will help the sauce penetrate better and make them easier to eat. Place the ribs in a wok or pot, cover generously with water, add 5 bay leaves and 1 Tbsp of cooking wine, and boil for 20 minutes over high heat. This pre-boiling step removes any gamey smell and tenderizes the meat.
Step 2
After pre-boiling for 20 minutes, immediately transfer the pork ribs to cold water and rinse them thoroughly. It’s important to rinse them well to remove impurities and excess fat. Once rinsed, separate the ribs into individual portions and arrange them neatly in your prepared pressure cooker.
Step 3
Now, it’s time to season the ribs! On top of the ribs in the pressure cooker, sprinkle 1 bottle of store-bought pork rib sauce, 2 Tbsp of tuna extract, 1 Tbsp of cooking wine, 2 Tbsp of minced garlic, 2 Tbsp of soy sauce, 1 Tbsp of sesame oil, and a pinch of black pepper. Gently toss everything together with your hands to ensure the sauce evenly coats the ribs.
Step 4
After mixing the seasoning well, carefully pour in 1 cup (200ml) of water. This water will create steam in the pressure cooker, helping to make the ribs extra tender.
Step 5
Now, let’s cook them in the pressure cooker. Cover with the lid and bring to a boil over high heat for 10 minutes until steam builds up. Once pressure is reached, reduce the heat to medium and cook for 5 minutes, then lower to low heat and cook for another 5 minutes. After about 20 minutes of cooking, turn off the heat and wait for the pressure to release completely before opening the lid. Never force the lid open while it’s still pressurized!
Step 6
Once all the steam has escaped from the pressure cooker, open the lid. Transfer the cooked ribs and sauce directly into a wok or a wide pan. After transferring, add about 1 more cup (200ml) of water. This extra water will help maintain the right consistency of the sauce and keep the ribs moist as it simmers.
Step 7
Simmer the ribs in the wok over medium-low heat. Stir occasionally with a spatula until the sauce has thickened to your desired consistency and has a nice glossy sheen. Be careful not to cook over high heat, as this can cause them to burn. Finally, drizzle in 1 Tbsp of sesame oil for a nutty aroma.
