Main Ingredients

  • 4 bunches spinach
  • 4 eggs
  • 20g carrot
  • 1/4 onion
  • 1 shiitake mushroom
  • A pinch of red bell pepper
  • 50g Spam
  • 6 Tbsp milk

Seasoning & Others

  • 10g butter
  • 1 Tbsp olive oil
  • 1 tsp salt
  • A pinch of black pepper

Cooking Instructions

Step 1

First, carefully trim the root ends of the fresh spinach and wash it thoroughly under running water. It’s important to rinse it meticulously to ensure no dirt remains.

Step 1

Step 2

Once washed, cut the spinach into bite-sized pieces, about 3cm long. Cutting them to a suitable length will make them easier to handle when cooking.

Step 2

Step 3

Let’s make use of those leftover vegetables in your fridge! Finely chop about 20g of carrot, 1/4 onion, 1 shiitake mushroom, and a pinch of red bell pepper into small, thumbnail-sized pieces. Also, slice 50g of Spam into similar-sized pieces. Chopping all ingredients finely will enhance the texture of the finished frittata.

Step 3

Step 4

In a bowl, crack 4 fresh eggs. Add 6 tablespoons of milk and a pinch of salt. Whisk everything together gently with a whisk until well combined, creating your egg mixture. Adding milk will result in a creamier texture.

Step 4

Step 5

Now, let’s start sautéing. Heat a frying pan over medium heat and add 1 tablespoon of olive oil and 10g of butter. Once the butter melts, add the chopped onion and Spam. Sauté for about 1 minute to release their aromas. Cooking until the onion becomes translucent is ideal.

Step 5

Step 6

Once the onion and Spam are somewhat cooked, add the chopped carrot and sauté for another minute. Cook the carrots until they are slightly tender.

Step 6

Step 7

Next, add the shiitake mushrooms and sauté for about 1 minute. Stir-fry quickly to bring out the mushroom’s flavor.

Step 7

Step 8

Finally, add the chopped spinach and gently toss everything together. Sauté for about 1 minute, just until the spinach begins to wilt. Be careful not to overcook, as it can lose its crispness.

Step 8

Step 9

Pour the prepared egg mixture evenly over the sautéed vegetables. Once the edges of the egg mixture begin to set, gently stir with chopsticks for about 30 seconds. This helps prevent the eggs from clumping and ensures they mix well with the ingredients. Then, reduce the heat to low, cover the pan with a lid, and cook slowly for about 10 minutes. Patience will reward you with a moist and fully cooked frittata.

Step 9

Step 10

Voila! Lift the lid to reveal your perfectly cooked, golden-brown Spinach Frittata. Carefully slide it onto a plate while it’s warm. You’ll have a delicious brunch dish where the creamy eggs and fresh spinach create a fantastic harmony. Enjoy your meal!
