This is a stir-fried fern dish I made using some boiled ferns my mother-in-law gave me while she was preparing for ancestral rites. ^^

Stir-Fried Fern Ingredients

  • 214g boiled ferns
  • 2 Tbsp soy sauce for soup (guk-ganjang)
  • 1 Tbsp perilla oil (deulgireum)
  • 210ml anchovy-kelp broth
  • A pinch of sesame seeds (crushed)

Cooking Instructions

First, prepare 214g of boiled ferns. For the best texture, avoid squeezing out all the moisture; a slightly damp fern will result in a softer, tastier dish. Place the ferns in a bowl and lightly squeeze out excess water.

Now, let’s marinate. Add 2 tablespoons of soy sauce for soup (guk-ganjang) and 1 tablespoon of perilla oil (deulgireum) to the ferns. Gently mix and massage them with your hands to ensure the seasoning is evenly distributed. This step is crucial for infusing flavor.

Let the marinated ferns rest for about 10 to 20 minutes. This resting period allows the seasonings to deeply penetrate the ferns, enhancing their overall flavor profile.

Heat a pan over medium heat. Add the marinated ferns and stir-fry for about 2-3 minutes, making sure to keep them moving to prevent sticking. This step awakens the natural flavors of the ferns. Then, pour in 210ml of anchovy-kelp broth and stir well.

Once the broth begins to simmer, reduce the heat to low, cover the pan, and let the ferns cook for 10 to 15 minutes, or until they are tender when pierced with a fork. Cooking them with the lid on allows them to become wonderfully soft.

While the ferns are cooking, remember to occasionally lift the lid and stir them gently. This prevents them from sticking to the bottom of the pan and ensures even cooking.
