Tender Tofu-like Steamed Egg (Ttukbaegi Style in a Pot)

Hello everyone! Today, I’ll show you how to make fluffy and delicious steamed eggs using just a pot, even if you don’t have a ‘ttukbaegi’ (Korean earthenware pot). Don’t worry if you’re hesitant to use the microwave or don’t own a ttukbaegi. For a deep umami flavor, I’ve used anchovy-kelp broth, but plain water works perfectly fine when you’re short on time. While it primarily uses chopped green onions, you can also add other finely chopped vegetables like onions and carrots for an even richer taste. This recipe is for 4 servings, measured with a regular soup spoon. You can adjust the number of eggs from 5 to 7 depending on their size, and feel free to modify the amount of salt to your preference. We’ll add sesame oil at the end for aroma, and toasted sesame seeds are added at the beginning to eliminate any eggy smell – a secret tip!
Ingredients- 6 Eggs
- 300ml Anchovy-Kelp Broth
- 3 Tbsp Chopped Green Onion
- 1/2 Tbsp Salt
- A pinch of Ground Sesame Seeds
- A little Sesame Oil

Step 1
1. First, crack 6 eggs into a bowl. Add about 1/2 Tbsp of salt, a pinch of ground sesame seeds for a nutty flavor, and 3 Tbsp of chopped green onions. Whisk them gently until the egg whites are broken and a slight froth appears. (Tip: Since egg sizes vary, you can adjust the quantity to 5-7 eggs. I’ve only used green onions here, but finely chopping and adding carrots or onions will offer a more diverse texture and taste.)

2. Now, pour 300ml of anchovy-kelp broth into a pot and bring it to a boil over high heat. Once the broth is boiling, slowly pour in the whisked egg mixture. Reduce the heat to medium and let it cook for about 1 minute until the egg mixture starts to set slightly.

3. After 1 minute, gently scrape the bottom of the pot with a wooden spoon or spatula, stirring the egg mixture once or twice. Then, reduce the heat to low, cover the pot with a lid, and let it steam for about 4 more minutes. It’s important to stir gently from the bottom every so often to prevent burning. Finally, drizzle a little sesame oil over the top to eliminate any eggy odor and add a nutty aroma. Your wonderfully fluffy and tender steamed egg will be complete!
