Main Ingredients- 1.5 Zucchini
- 100g Ground Beef (or lean beef)
- 1/4 Onion
- A little Carrot
- 1 Enoki Mushroom
- 1 pinch Salt
- 1 Egg White
- 1 Tbsp Potato Starch

Step 1
First, prepare 1 zucchini and cut it into 4 equal pieces. Cutting them into large pieces makes it easier to scoop out the insides and helps them hold their shape when cooked.

Using a teaspoon, carefully scoop out the inner part of the zucchini. Be careful not to scrape all the way to the bottom, maintaining a moderate thickness will help when filling with the meat mixture later. The scooped-out zucchini pulp can be added to soybean paste stew or thinly sliced and made into pancakes.

Place the hollowed-out zucchini pieces in lightly salted water and let them soak for 15 minutes. This helps to remove any bitterness from the zucchini and preserves its crisp texture.
Step 4
While the zucchini is soaking, prepare the filling for the beef mixture. Finely chop the onion, carrot, and enoki mushroom into similar-sized pieces. If using lean beef, mince it finely, perhaps using a blender. Combine the ground beef with the finely chopped vegetables. Season with salt, then add only the egg white and mix well until it becomes slightly sticky. The egg white acts as a binder.
Step 5
After soaking in the salt water, pat the zucchini dry thoroughly with paper towels. If there’s remaining moisture, the starch won’t adhere well, so wipe them carefully. Then, lightly coat the hollowed-out inner surface of the zucchini with potato starch. The starch will help to keep the filling from falling out.

Fill the hollowed-out zucchini with the prepared beef mixture, pressing it down firmly so it mounds generously. Avoid overfilling; a moderate height will ensure a beautiful shape and easy eating after steaming.

Place the zucchini and beef stuffed dishes in a steamer with boiling water and steam for 10 minutes. Be careful not to overcook the zucchini; steaming time should be adjusted to maintain a slight bite.
