Main Ingredients- 1/2 Tbsp minced garlic
- 1/4 onion
- 75g chicken breast
- 2 stalks spring onions (scallions)
- 1 egg
- 1 bowl of cold cooked rice
Sauce- 1 Tbsp fish sauce
- 3/4 Tbsp oyster sauce
- 1/2 tsp sugar

Cooking Instructions
Step 1
First, dice the chicken breast into small, bite-sized pieces. Using chicken breast will result in a mild and clean-tasting fried rice.
Step 2
Wash the spring onions and cut them into 4-5 cm lengths. Their crisp texture will add freshness to the fried rice.
Step 3
Finely mince the onion. This will help it release its sweetness when cooked.
Step 4
Heat a wok or large pan over medium-low heat with a generous amount of oil. Add the minced garlic and stir-fry until fragrant. Then, add the minced onion and sauté until it becomes translucent.
Step 5
Add the diced chicken to the pan and stir-fry until the exterior is cooked through. Be careful not to overcook, as chicken breast can become dry.
Step 6
Push the chicken and vegetables to one side of the pan. Pour the lightly beaten egg into the empty space and let it set slightly. Using chopsticks, quickly scramble the egg in a figure-eight motion until just cooked.
Step 7
Add the cooked rice and the sauce ingredients (fish sauce, oyster sauce, sugar) to the pan. Break up any clumps of rice with your spatula or spoon, and stir-fry over high heat until the sauce is evenly distributed and coats every grain of rice.
Step 8
Finally, add the chopped spring onions and toss everything together briefly. Turn off the heat immediately. Adding the spring onions at the end preserves their fresh aroma and crisp bite. Serve hot for the best flavor.
