Step 1
First, prepare water that is close to 50°C (122°F). If you have a thermometer, aim for a temperature between 48°C and 52°C (118.4°F – 125.6°F). If you don’t have a thermometer, you can achieve this by mixing equal parts cold water and boiling water (a 1:1 ratio). This specific temperature is crucial for effectively opening the vegetable’s pores.
Step 2
Gently rinse leafy vegetables like lettuce, perilla leaves, and cabbage in the 50°C water for about 2 to 3 minutes. Be careful not to soak them for too long, as they might start to cook. You’ll visibly notice the wilted leaves begin to perk up and regain their freshness as you rinse.
Step 3
As time passes, you’ll see the vegetables becoming even more visibly revived. They will start to feel more firm and look glossier.
