The Ultimate Creaminess! New Style Loco Moco

Loco Moco is a popular Hawaiian dish, but often requires ingredients you don’t typically use at home. So, I’ve reimagined the recipe using ingredients that are easily available in your kitchen. I can confidently say it’s incredibly tender and delicious! This dish will surely captivate everyone with its moist and rich flavor.

Main Ingredients

  • 50g ground beef
  • 50g ground pork
  • 1 egg
  • 2cm zucchini
  • 1 king oyster mushroom
  • 1/2 tomato
  • A small handful of salad greens

Meat Marinade

  • Pinch of black pepper
  • 7.5ml milk (approx. 1/2 Tbsp)
  • 7.5ml olive oil (approx. 1/2 Tbsp)
  • 7.5ml cornstarch (approx. 1/2 Tbsp)

Steamed Egg

  • 7.5ml milk (approx. 1/2 Tbsp)
  • 1 Tbsp shredded cheese

For Frying the Meat

  • 15ml water (approx. 1 Tbsp)

Sauce

  • 15ml ketchup (approx. 1 Tbsp)
  • 2.5ml sugar (approx. 1/2 tsp)
  • 7.5ml oyster sauce (approx. 1/2 Tbsp)

Garnish

  • A pinch of dried parsley

Cooking Instructions

Step 1

The key here is to mix the ground beef and pork well inside a plastic bag. This method is more hygienic than mixing by hand and prevents the cornstarch from clumping. Gather the ends of the bag, create a smaller space, inflate the bag with air, and shake it to evenly distribute the cornstarch and seasoning.

Try to create a vacuum-like effect in the bag. Then, use both hands to rub and mix the meat as if you were kneading dough. If you leave too much empty space in the bag, the meat will stick to different parts, making it difficult to remove. Be mindful of this.

Crack the egg into a bowl, whisk to break the chalaza (the white stringy bits), and then strain it through a sieve for a smoother egg mixture. Mix in 1 Tbsp of shredded cheese and 7.5ml of milk. Cover the bowl with plastic wrap and microwave on 500W for 1 minute. Keep the plastic wrap on. This will create a wonderfully fluffy steamed egg.

While the meat is still in the plastic bag, shape the marinated ground meat into patties about 2cm thick. Shaping it inside the bag prevents it from sticking to your hands. Heat a pan over medium heat, then place the patties and your prepared vegetables (zucchini, king oyster mushroom, tomato) in the pan to cook. (Cook for about 1 minute).

After 1 minute, flip the patties. Pour about 1 Tbsp (15ml) of water around the meat, then reduce the heat to low, cover with a lid, and let it cook for 3 minutes. After 3 minutes, flip the vegetables as well, cover again, and cook for another 2 minutes. Remove the vegetables from the pan. Add all the sauce ingredients (ketchup, sugar, oyster sauce) to the pan and cook until the sauce thickens. Then, toss the meat patties in the sauce to coat them evenly.

Turn off the heat once the sauce reaches a thick consistency, similar to the photo. Be careful not to overcook, as it can burn.

Now it’s time to plate your Loco Moco beautifully! Start with a base of rice, then add a layer of fresh salad greens. Next, carefully invert the steamed egg onto the plate for a nice presentation. Place the sauce-coated meat patty on top. Finally, arrange the cooked zucchini, king oyster mushroom, and tomato attractively, and sprinkle with dried parsley for a delightful finish. Your Loco Moco is complete!

When cooking for 3 or more servings, first cook the vegetables and set them aside. Wipe the pan clean, then cook the meat patties as before. Sear over medium heat for 1 minute, then cover, add 1 Tbsp of water, and cook on low heat for 5 minutes. In this case, the amount of liquid will increase, so it’s important to remove excess oil from the pan before adding the sauce to ensure it thickens properly. If the pan temperature has dropped due to the added water, briefly increase the heat to medium before reducing it back to low and adding the sauce.
