Main Ingredients- 1 pack of ramen noodles (or thin dried noodles)
- 1/4 medium onion
- 40g napa cabbage
- 10g carrot
- 2 leaves of napa cabbage kimchi
- 1/2 Tbsp coarse sea salt
- 1 Korean chili pepper (cheongyang chili)
Flavorful Sauce- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp double-strength vinegar
- 2 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds
- 2 Tbsp oligo-syrup (or corn syrup/honey)
- 2 Tbsp gochujang (Korean chili paste)
- 1 Tbsp double-strength vinegar
- 2 Tbsp sesame oil
- 1.5 Tbsp toasted sesame seeds
- 2 Tbsp oligo-syrup (or corn syrup/honey)
Cooking Instructions
Step 1
Let’s start by preparing our fresh vegetables. Finely julienne the onion, carrot, and napa cabbage. Finely mince the Korean chili pepper – this adds a wonderful kick of heat! For a delightful crunch, rinse the kimchi leaves to remove excess brine, then julienne them. These prepared vegetables will provide fantastic texture and flavor to your bibim-myeon.
Step 2
Now, it’s time to create the magic sauce that defines this dish! In a bowl, combine 2 tablespoons of gochujang, 1 tablespoon of double-strength vinegar, 2 tablespoons of fragrant sesame oil, 1.5 tablespoons of toasted sesame seeds, and 2 tablespoons of oligo-syrup for a touch of sweetness. Stir in the minced Korean chili pepper. Give it a taste – you’ll be amazed by how delicious this sauce is, possibly even better than your favorite store-bought version!
Step 3
Chewy noodles are the heart of bibim-myeon! Bring a generous pot of water to a rolling boil. Add 1/2 tablespoon of coarse sea salt. Once the water is boiling vigorously, add the ramen noodles. Using tongs, gently lift and lower the noodles for about 3 minutes, or until they reach a perfectly chewy al dente texture. If you don’t have ramen noodles, any thin dried noodle will work beautifully.
Step 4
Quickly transfer the cooked noodles to a colander and rinse them thoroughly under cold running water. This step removes excess starch and cools the noodles. Drain them very well; ensuring minimal water remains is key to allowing the sauce to cling perfectly to each strand.
Step 5
It’s time to assemble your masterpiece! Place the well-drained noodles in a serving bowl. Arrange the prepared vegetables and kimchi attractively on top. Then, generously spoon the flavorful sauce over everything. For an extra layer of aroma and taste, consider adding shredded perilla leaves or more chopped Korean chili peppers. You might want to adjust the amount of sauce based on the quantity of vegetables you’ve used. It’s a good idea to reserve about 2 tablespoons of the sauce initially and add more to your liking. Now, mix everything together and enjoy your incredible homemade bibim-myeon!
