Cooking Instructions
Step 1
First, prepare the cheese rice cakes, Vienna sausages, and bamboo skewers. Soaking the skewers in water for a bit beforehand can prevent them from breaking when you thread the rice cakes and sausages.
Step 2
Make 2-3 small slits on the Vienna sausages. This helps prevent them from bursting while cooking and allows the sauce to penetrate better, making them more flavorful. After scoring, briefly blanch the sausages in boiling water for about 30 seconds, or pour hot water over them to remove any impurities. Thoroughly pat them dry with a paper towel. Rinse the cheese rice cakes under running water and drain them.
Step 3
Now, thread the rice cakes and sausages onto the skewers, alternating between them. A common and visually appealing pattern is rice cake – sausage – rice cake – sausage. Be careful of the sharp ends of the skewers.
Step 4
Heat a generous amount of cooking oil in a pan over medium heat. If there isn’t enough oil, the So-tteok So-tteok might not fry evenly and could stick. You want enough oil to coat them as if you were deep-frying. Let the pan preheat.
Step 5
Once the pan is adequately heated, carefully place the skewered So-tteok So-tteok into the oil and reduce the heat to low. Frying over high heat can burn the outside before the inside is cooked, so it’s important to fry them slowly over low heat. Fry until the sausages are golden brown on all sides and the rice cakes are slightly puffed up. Roll them gently to ensure even cooking.
Step 6
When the So-tteok So-tteok are nicely fried, remove them from the pan and place them on paper towels to drain excess oil. Now, let’s make the sauce. Wipe out any excess oil from the frying pan. Add the ketchup, oligosaccharide, and soy sauce. Cook over low heat, stirring constantly to prevent the sauce from burning or sticking. This constant stirring is key!
Step 7
Once the sauce has thickened slightly and developed a glossy sheen, add the fried So-tteok So-tteok back into the pan. Toss them gently to coat each piece evenly with the sauce. This is how you get delicious So-tteok So-tteok! For an extra touch, sprinkle some sesame seeds on top for garnish. Enjoy them warm for the best flavor!
